This is the seventh year of the Top Ten Taiwan Instant Noodles list! Every year, I’m truly amazed at the innovation and unique varieties coming from the beautiful island of Taiwan. If you haven’t had the experience of visiting, you really should – the food, the culture – it truly has been a life changing experience for me. Growing up, all I knew of Taiwan was labels on products that simply said ‘made in Taiwan’ – but it so much more. One aspect is the noodle, and they’re really unique and delicious. This is a list of my favorite out of the reviews I’ve done up to number 3,284. Many images you will see have garnish, however only the base product before any is added is what’s reviewed, as in all of my reviews. I hope you enjoy this year’s list and consider trying some of these great varieties if you’ve not tried before – they’re really great! This one I enjoyed immensely – lots of noodles, but the broth was the show stopper. The combo of the liquor and the rich beef broth was very savory. Add vegetables and real beef from the retort pouch and there’s why it’s on this list. Original review

A very recent review. Found this at a local store and the combo of ginger and sesame was intriguing. Take a thin noodle and combine it aptly with the aforementioned flavors and there you go. Very tasty ginger and sesame are in the forefront and it’s just plain umami incarnate. Original review

A wide noodle with scalloped edges. These have the bonus of a thin edge and thicker center, giving a delicate as well as hearty aspect. The flavor is very good – a soy bump, some onion hit, then the Sichuan pepper oil. It all works together magnificently. Original review

This bowl, in fact, is two bowls. One you steep the noodles in. The second? Drain the broth from the first by poking holes in the lid and pour into it. The noodle is accompanied by a spicy green curry and chunks of vegetable and real chicken. I think it’s safe to say most people who follow this website are keen on the fact that I love Thai food and I love curry. What’s neat here is that these curries – one red and one green – pair so well with a Taiwanese noodle – and naturally so. Savory curries and dry noodles marry in such a way that a perfect balance of two cuisines harmonize rather than find conflict or dissonance. Impressive! Original reviews 1 & 2

The noodles came out with a very nice chew. They aren’t mushy whatsoever and have a confident backbone. The flavor is very good as well. The notes of sesame, Sichuan pepper oil, Sichuan pepper in the dry mix, sesame sauce as well as soy sauce all work together and play well with each other; nobody’s feet get stepped on. For a long time, I’ve really enjoyed this style of noodle from Taiwan. It’s wide, with a center line which is thicker, and the sides are thinner – which gives them a very unique and wonderful mouthfeel. I’ve also always thought that these would just sing is in a broth (usually they are presented with a combination of sauces but no broth). The soup is rich with a strong beef flavor and hint of Sichuan peppercorn that do not overwhelm. The nice part is the inclusion of real beef in here. It should be noted that there is a special version of this that comes out during Lunar New Year which includes Wagyu beef – very expensive at a whopping $15USD per serving!, but very tasty as well. Spiciest Instant Noodles 2020

Usually, this Taiwan list would have been released 3 weeks ago – the spicy list would’ve been released last month – what gives?! Well, I’ve been busy. With my 3 year old son Miles home from preschool all summer, time has been spent with him a lot more. Setting up a green screen is a lot more difficult with him and his little sister Miriam running around like banshees in our apartment. I’ve been busy with something else as well…

The Ramen Rater Diet

In October of 2018, my doctor (who is Taiwanese I should mention!) Gave me a talk. It was the talk I’d gotten many times from him and other doctors: you need to lose weight. He said also that my cholesterol was very high. He told me this on the right day at the right time I suppose and I decided to go all in. I did my first The Ramen Rater Diet video in April after I visited my doctor in April, having lost 65 pounds. I’ve kept it up and lost a lot more since then, and the next video will be out towards the end of October – after a year of eating healthy and exercising every day (I walk a lot – up to 25 miles in a day), I’ll do a big update and share more of what I do and how I do it with you. Many folks have taken my advice and are getting healthier as well, which is very humbling. I think if I can make a big change like this, anyone can!

Almost 3000 reviews ago I gave this one a try. It looks as though I really liked it. It’s been such a long time it’s getting a new number- mainly because I’m going to guess that sourcing has changed at least soewhat and also the cup is different; it used to be a foam bowl.

It should be noted as well that the little cook branding is in Taiwan as well, but this is from Ratchaburi, Thailand. Ratchaburi gets hot and humid and is really beautiful. If you get the chance to visit, check out Dheva Mantra over there – very nice place to stay.

To prepare, add dry sachet and fill to line with boiling water. Cover for 3~4 minutes (I’m going for 4), and put retort pouch on top so it gets some heat. Finally, as pouch contents, stir, and enjoy!

Finished (click to enlarge). Added nothing. The noodles in here are very good – thick and a nice chew to them. The broth has a very strong braised beef kick to it and just a superb amount of spiciness to complement bit not overwhelm. Broth also has a good thickness/oiliness to it. Where it kind of gets strange is the TVP. It doesn’t really compliment all that much, and I suspect that there is a version available that does indeed contain real beef which would be exceptional. 4.0 out of 5.0 stars.  UPC bar code 684431001111.

Much to my chagrin, TTL keeps coming out with interesting varieties. TTL stands for Taiwan Tobacco and Liquor – and they always have some kind of alcohol with their products. This one comes with a retort pouch will of creamy sauce and pork which is augmented by a sachet of white wine. A sipping soup is made with a separate sachet. The noodles are thick and chewy – very premium. The broth has a very rich miso flavor that had a little thickness and a nice oiliness. The vegetables and bits hydrated perfectly – nice bits of ground meat and menma float happily about and are of good quality. Original review

First, the noodles have a little bit thicker a gauge than most instant varieties. Indeed they are premium although a slight bit softer than one might expect. The broth is a sea of rich pork flavor – different than many. As a matter of fact, this really REALLY has a nice pork flavor; most pork varieties don’t have a great pork taste as the pork taste they do have get overshadowed by saltiness. The vegetables hydrated well and the pork was very good. Original review

So the noodles are broad and flat with a light chew and an excellent quantity. The broth is a tour de force of beef taste. It has a good thickness/oiliness to it as well as a good flavor. Indeed as expected, there’s a decent punch of spiciness. Indeed, the chunks of beef are of good size and quality. Moreover, the liquid with the beef in the retort pouch add depth to the broth. Finally, little rings of chilli pepper are here and there, joining the party. Original review

Okay so first off, this is a heavy bowl. There’s a huge retort pouch in here full of beef and beef tendon. The noodles are wide and have a great chew and the broth has a nice flavor. But the start of the show is that braised beef and tendon – it’s perfect and there’s just so much of it. Very impressive! Original review

Talk about amazing. Now, on most of these bowls, you’ll notice I’ve added my own garnishes. I don’t count them in my reviewing – everything is reviewed prior to any additions I make. This is one where I’ve added nothing and just look at it! This one had very good noodles to start off. The broth was a very thick prawn infused decadent flavor spectacle. Then there’s the little crunchy topping and the other garnish they provide and this is just amazing stuff. Wow. Floored. Original review

Wow – I’m so freaking impressed with this one. First, there are two bowls. Peel back the lid of the first bowl and add boiling water. After a short time, you poke holes in the lid and drain the liquid into the second. A sachet of soup base is added and you have a soup with lots of corn and herbs. Next, a huge sachet with chicken and vegetables boasts a great spicy green curry flavor which mixes with the noodle. A really amazing product which is unique and delicious. This is Little Cook Thailand Green Curry Instant Noodle’s second year in the number one spot in a row – congratulations! Original review

This is a heavy bowl. Not metaphorically but in regards to the bowl’s actual weight. I am very curious to see everything that’s in here. Here’s a little about braising from WIkipedia –

Braising relies on heat, time, and moisture to break down the tough connective tissue (collagen) that binds together the muscle fibers collectively called meat, making it an ideal way to cook tougher, more affordable cuts. Many classic braised dishes (e.g., coq au vin) are highly evolved methods of cooking tough and otherwise unpalatable foods. Both pressure cooking and slow cooking (e.g., crockpots) are forms of braising.

Most braises follow the same basic steps. The food to be braised (meats, vegetables, mushrooms, etc.) is first pan-seared to brown its surface and enhance its flavor (through the Maillard reaction). If the food will not produce enough liquid of its own, a certain amount of cooking liquid that often includes an acidic element (e.g., tomatoes, beer, balsamic vinegar, wine) is added to the pot, often with stock. A classic braise is done with a relatively whole cut of meat, and the braising liquid will cover two-thirds of the food in the pan. Then, the dish is covered and cooked at a very low simmer, until the meat becomes so tender that it can be “cut” with just the gentlest of pressure from a fork (versus a knife). Often the cooking liquid is finished to create a sauce or gravy, as well.[3][4]

Sometimes foods with high water content (particularly vegetables) can be cooked in their own juices, making the addition of liquid unnecessary.[5]

A successful braise intermingles the flavors of the foods being cooked with those of the cooking liquid. This cooking method dissolves the meat’s collagen into gelatin, which can greatly enrich and thicken the liquid. Braising is economical (as it allows the use of tough and inexpensive cuts), and efficient (as it often enables an entire meal to be prepared in a single pot or pan).

Before you ask, no – you won’t be able to find this one in the United States – this one is full of meat. It’s a pity too – so many varieties that could line store shelves here aren’t allowed. Anyways, let’s have a look!

Finished (click to enlarge). Wow. Okay, the noodles are broad and have good backbone. They’re the perfect place to start in this really premium bowl. The broth has a nice beefy kind of taste to it – not extremely thick but just right. The real showstopper is the massive retort pouch full of braised beef and tendon – just about as tender as you can get with a strong flavor. This is the most meat I’ve seen in a retort pouch to date. The little sachet of chilli powder was a nice touch and gave it a nice little kick. The Sour vegetables added a nice texture as well. The pork has a nice sweetness and ‘fall off the bone’ texture to it which is pure delicacy. The army of decent sized slices of narutomaki were amazing, and the spring onion and bamboo shoots were perfect. A bowl of amazing taste and quality. Original review

First, the noodles have a little bit thicker a gauge than most instant varieties. Indeed they are premium although a slight bit softer than one might expect. The broth is a sea of rich pork flavor – different than many. As a matter of fact, this really REALLY has a nice pork flavor; most pork varieties don’t have a great pork taste as the pork taste they do have get overshadowed by saltiness. The vegetables hydrated well and the pork was very good. Original review

So the noodles are broad and flat with a light chew and an excellent quantity. The broth is a tour de force of beef taste. It has a good thickness/oiliness to it as well as a good flavor. Indeed as expected, there’s a decent punch of spiciness. Indeed, the chunks of beef are of good size and quality. Moreover, the liquid with the beef in the retort pouch add depth to the broth. Finally, little rings of chilli pepper are here and there, joining the party. Original review

Talk about amazing. Now, on most of these bowls, you’ll notice I’ve added my own garnishes. I don’t count them in my reviewing – everything is reviewed prior to any additions I make. This is one where I’ve added nothing and just look at it! This one had very good noodles to start off. The broth was a very thick prawn infused decadent flavor spectacle. Then there’s the little crunchy topping and the other garnish they provide and this is just amazing stuff. Wow. Floored. Original review

Wow – I’m so freaking impressed with this one. First, there are two bowls. Peel back the lid of the first bowl and add boiling water. After a short time, you poke holes in the lid and drain the liquid into the second. A sachet of soup base is added and you have a soup with lots of corn and herbs. Next, a huge sachet with chicken and vegetables boasts a great spicy green curry flavor which mixes with the noodle. A really amazing product. Original review

I found this one on my trip to Taiwan in November 2016. It was at the Jason’s Market at the bottom of the Taipei 101. That was a cool day – here’s a little about the Taipei 101 from Wikipedia –

Taipei 101 (Chinese: 臺北101 / 台北101) – stylized as TAIPEI 101[1] and formerly known as the Taipei World Financial Center – is a landmarksupertall skyscraper in Xinyi District, Taipei, Taiwan. The building was officially classified as the world’s tallest in 2004, and remained such until the completion of the Burj Khalifa in Dubai in 2009. In 2011, the building was awarded the LEED platinum certification, the highest award according to the Leadership in Energy and Environmental Design (LEED) rating system, and became the tallest and largest green building in the world.[9][10] It has the fastest elevator going from the 5th floor to the 87th in 49 to 53 seconds.

Construction on the 101-story tower started in 1999 and finished in 2004. The tower has served as an icon of modern Taiwan ever since its opening. The building was architecturally created as a symbol of the evolution of technology and Asian tradition. Its postmodernist approach to style incorporates traditional design elements and gives them modern treatments. The tower is designed to withstand typhoons and earthquakes. A multi-level shopping mall adjoining the tower houses hundreds of stores, restaurants and clubs. Fireworks launched from Taipei 101 feature prominently in international New Year’s Eve broadcasts and the structure appears frequently in travel literature and international media.

Yeah so this building was huge and tall! We took the elevator up as far as one could go and it’s fast. However although fast it was really smooth. Indeed the only indication that you were hurtling upward was you ears popping. I saw this variety on YouTube before the trip and wondered if I’d see it. Well, I did! So, what’s fascinating about this one is that it has two bowls – one for a stir noodle and one for the soup. You east some noodles then slurp the broth – back and forth. Green curry sounds good! Let’s check it out!

Poke holes in the lid with chopsticks and drain water from noodle bowl into second bowl and stir. Add contents of large pouch to the drained noodles. Finally, stir and enjoy!

Finished (click to enlarge). To start, the noodles. As you can see, they not only flat but a little broad and thick. The had a great chew and great quality. The retort pouch held a bounty of goodness for them. Indeed, good sized chunks of chicken, peas and enjoyably spicy hot peppers meant business. Moreover, the green curry sauce tied it all together very well. The accompanying sipping soup was full of herbs as well as corn. I found myself going from the noodles to sipping the soup and back again. The only time I’ve ever seen dual-bowl varieties has been from Taiwan, and with the level of flavor and enjoyment the provide, it is a wonder the rest of the world doesn’t follow suit. The noodles came out just perfectly as they usually do – they don’t get too full of water and have a very nice gauge and feel. The broth has a spicy and heavily spiced flavor with some heat to it – very rich and strong flavors. I liked it a lot Original review

Added coriander, sliced squid, mung bean sprouts, sweet onion, shrimp, seafood flavored tofu and Jane’s Krazy Mixed Up Pepper seasoning. The noodles are thin and light with a decent little bounce to them. They aren’t like the ones you’d experience in MAMA Tom Yum packs that are pre-seasoned with a nice crumble, but different. The flavor is really quite good and can be summed as kind of a sweet seafood taste with a great bite of spiciness and then this lingering flavor from the holy basil. It’s got a really different flavor I wish was present more often instant noodle varieties. The dehydrated carrot and seafood hydrated very nicely. This was a very pleasant surprise! Original review

Added green Thai chillies from Dwayne B., Salad Cosmo mung bean sprouts, boiled pork for hot pot, carved squid, white onion, coriander, tofu puff, lime and Sriraja Panich Chilli Sauce from Michael over at EastLand Foods. The noodles hydrated well with a hint of crumble that works. The broth is fascinating; it has a kind of lime and tamarind kind of flavor to it with a little heat and garlic as well. The retort pouch had some nice pork and little balls which reminded me of fishball which really added a lot of nice texture and flavor. Original review

They’re slippery, so I found that using kitchen scissors to make a couple crosscuts through the mass of noodles in the pot made them easier to navigate. The broth is really good – has a spicy and lemongrass flavor with a nice shrimp hit, plus a nice sweetness as well I wasn’t expecting. The little shrimp are in there as well, which hydrated quite nicely. Very pleased with this one Original review

The broth has a light spiciness and sweetness to it with just a skosh of heartiness from the oil that works perfectly. I was extremely pleased with this one – extremely. Original review

10 – JFC Japanese Style Noodle Soup Curry Flavour – South Korea

Fresh udon noodles and a curry sauce that’s thick and luxuriant. If you’re in need of a curry fix, look no further! Every time I see it on a store shelf, I get this kind of warm, fuzzy feeling. Original review here

9 – Ottogi Spaghetti Ramen – South Korea

A fun bowl of noodles with thick South Korean ramyun noodles, a sweet powder and a sweet and slightly spicy spaghetti sauce. A nice twist on a classic. Original review here

8 – Little Cook Spicy Beef Flavor – Thailand

This one features firm noodles, a spicy broth with beef and curry notes and fake meat that’s surprisingly good. Myriad of different components collide together in an irresistible way. Original review here

7 – Nongshim Chapagetti Roasted Chajang Noodle – United States

Although originating in South Korea, Nongshim now makes these in Southern California. Chajang is a traditional Chinese black bean sauce that is wonderful with noodles and the nice part with this particular variety is that it’s the first I’ve seen in a bowl. What’s more, it’s easy to make and has excellent hearty flavor as well as great noodles. Original review here

6 – Paldo Kokomen Spicy Chicken Flavor King Cup – South Korea

Kokomen is a South Korean ramyun with a light or white broth. It’s got a chicken and jalapeno kind of flavor that’s really quite excellent. The translation from pack to bowl is exemplary, losing none of the quality. Original review here

5 – Little Cook Mushroom Vegetarian Premium Noodle – Thailand

A combination of a great quality noodle and nice broth is one thing, but they add a retort pouch with really nice vegetables that make this seem more gourmet. I’ve never been a big fan of mushrooms, but these are really quite good. Original review here

4 – Yamamoto Ponpoko Tempura Udon Fried Noodles Bowl – Japan

Thick, slightly chewy noodles and a broth with strong soy flavor. The tempura gives a satisfying crunch. Check out the original review as well to see why this one’s got a great name. Original review here

3 – Maruchan Midori No Tanuki Instant Soba Bowl – Japan

The only one from last year’s list to remain. Although it slipped out of first place, this is a seriously excellent bowl of noodles. The buckwheat noodles have a delicate crumble that works so well here and the broth is nice and rich. The disk of tempura is a real treat. Original review here

2 – FoodMon DJ-DOC Instant Ramen Rice Toppokki – South Korea

Topokki are like really thick chewy short noodles. They’re usually served with a spicy red sauce; here they join instant noodles along with the spicy sauce to make a succulent kind of Soiuth Korean lasagna-esque feast. Original review here

1 – Nissin Raoh Rich Soy Sauce Flavor – Japan

All I can say is that this stuff is epic. The noodles are extremely good and of very high quality. The broth is as rich as the name purports as well. What’s more, it comes with a slice of roast pork which hydrates well and has a very good texture and flavor. This is where it’s at! Original review here
