#10: Tseng Noodle Scallion With Sichuan Pepper Flavor

#10: Tseng Noodle Scallion With Sichuan Pepper Flavor

A longtime favorite of mine. A wide noodle with scalloped edges. These have the bonus of a thin edge and thicker center, giving a delicate as well as hearty aspect. The flavor is very good – a soy bump, some onion hit, then the Sichuan pepper oil. It all works together magnificently. Original review

#9: Hi-Lai Foods Lai Noodle

#9: Hi-Lai Foods Lai Noodle

The noodle comes out just perfectly with a very hearty chew and quality. The flavor is wonderful – notes of Sichuan peppercorn intermingle with soy and this charming Vegan mince that has a sweetness that lingers around the palate and then ducks in and out. Everything I love about Taiwanese dry noodle with a unique addition. Original review

#8: Little Couples Chicken Rice Flavor Dry Noodle

#8: Little Couples Chicken Rice Flavor Dry Noodle

Another broad noodle variety – this time paired with sauces that impart an excellent chicken rice flavor. This is absolutely excellent stuff and they’ve also come out with a Fish Head Casserole variety which is equally delicious and unique. Original review

#7: Mom’s Dry Noodle Spicy Goose Oil With Shallot Pack Taiwan 5

#7: Mom's Dry Noodle Spicy Goose Oil With Shallot Pack Taiwan 5

The noodle is a thin gauged and chewy air-dried variant. It picks up the different liquid sauces well. Flavors range from a Sichuan peppercorn heat to a savory note, and the goose oil add a slippery richness. The included shallot bits are salty and add a little texture. Just sensational stuff. #6: Little Cook Thailand Green Curry Chicken

#6: Little Cook Thailand Green Curry Chicken

This bowl, in fact, is two bowls. One you steep the noodles in. The second? Drain the broth from the first by poking holes in the lid and pour into it. The noodle is accompanied by a spicy green curry and chunks of vegetable and real chicken. The broth slurping soup worked well too. Original review

#5: Thai Town Tom Yum Flavor Noodles

#5: Thai Town Tom Yum Flavor Noodles

The noodles are great – excellent gauge and firm chewiness. The flavor is perfection – a sweet and tangy tom yum with a little heat and great lemongrass bump to it. The cabbage and coriander really adds a lot of texture as well since they don’t skimp on it. I’m absolutely thrilled with this new variety from Taiwan – wish I could try it at their restaurant! #4: Mom’s Dry Noodle Dan Dan Noodle

#4: Mom’s Dry Noodle Dan Dan Noodle

The noodles came out with a very nice chew. They aren’t mushy whatsoever and have a confident backbone. The flavor is very good as well. The notes of sesame, Sichuan pepper oil, Sichuan pepper in the dry mix, sesame sauce as well as soy sauce all work together and play well with each other; nobody’s feet get stepped on. Simple yet complex. Original review

#3: John’s Braised Scallion Oil Noodles

#3: John's Braised Scallion Oil Noodles

These noodles are really nice – light on the chew and a great mouthfeel. The flavor is a one two punch of scallion flavor, a bit of spicy, and umami for days. It’s got some flavors in there that just add up to a rich and flavorful experience like no other. Beautiful stuff and a nice surprise. Original review

#2: A-Sha LaoTao Beef & Tendon Noodle

#2: A-Sha LaoTao Beef & Tendon Noodle

I found the red box version of this range to be my favorite – until I tried this one! This fantastic variety is retaining it’s high place for yet another year. Just lavish and succulent – beef that melts in your mouth and upgraded with tendon meat, the noodle and broth and meat harmonize in a symphony that peaks with a flavorful crescendo. The other two in the range in the red box and the seasonal Wagyu are also absolutely top notch and worth a try. Original review

#1: Mom’s Dry Noodle Scallop & Hua Diao Wine Chicken Noodle Soup

The Ramen Rater's Top Ten Taiwanese Instant Noodles Of All Time 2023 Edition

After years of reviewing chicken flavor instant noodles, – and I’ve tried hundreds, this is far and away the finest I’ve had the pleasure to sample. The noodles are thin and of good quality. The broth is rich, flavorful and complex; a very gourmet experience – from the Hua Diao wine, the whole pieces of chicken with large bones present, and scallop flavor, this is just a sumptuous bowl that runs the gamut from a fine dining restaurant to something cooked at home for hours. Absolute perfection. Original review

The Ramen Rater Recipe Experiments

Ever thought of what you can make when instant noodles are an ingredient? Well, if not I have. A lot. I started with making breads last year – even breads with flour make from fried noodles that were ground into a fine powder. Logically, the next step was pizza – everyone likes pizza, right? Finally, I’ve done a few different ice creams. Check the Special Features section to see all of these experiments!

Definitive Guides

The Ramen Rater's Definitive Guide To Maruchan Ramen Noodle Soup

This year, I’ve decided to do a special series called Definitive Guides. Recipes, trivia, history, and more on some of the most loved and fascinating varieties of instant noodles around the world! So far, I’ve got one on Nongshim’s Shin Ramyun, and Indomie’s Mi Goreng and Nissin Foods’ Cup Noodles Pumpkin Spice! Very recently, I released a Definitive Guide To Maruchan Ramen Noodle Soup. Future guides will include MAMA Tom Yum, and more. My plan is do feature one or two products from each country.

A Petition To Benefit Those In Need

The Ramen Rater's Top Ten Taiwanese Instant Noodles Of All Time 2023 Edition

For the last few years, a thought has been bouncing around in my head. Why is there a spot to donate a dollar to elections on tax returns? I think that little spot can be better by donating a dollar or some set amount to Veterans who are living in poverty. At the end of tax season, the donations can go to all who qualify. I think that would be a good thing. I started a petition to do this, and if you’re in the USA, you can sign it here and please feel free to share it around! Thanks!
