Was crushed; hard to find this one and I had only one of them. Egad! Luckily, TTL sent all of these for Meet The Manufacturer (thank you again!) and now I can give it another go. I should note I didn’t spill anything this time – let’s give it a go!

Meet The Manufacturer: Re-Review: TTL Carbonara White Wine Carbonara Instant Noodle – Taiwan

Meet The Manufacturer: Re-Review: TTL Carbonara White Wine Sauce Instant Noodle - Taiwan

Happy to be revisiting this variety, It made The Ramen Rater’s Top Ten Instant Noodles Of All Time 2018 Edition list this year and with good reason: it’s really, really good. Here’s a little about carbonara from Wikipedia –

Carbonara (Italian: [karboˈnaːra]) is an Italian pasta dish from Rome[1][2] made with egg, hard cheeseguanciale (or pancetta), and pepper.

The recipe is not fixed by a specific type of hard cheese or pasta. The cheese is usually Pecorino Romano.[1] Spaghetti is the usual pasta, however, fettuccinerigatonilinguine, or bucatini are also used. Either guanciale or pancetta can be used. Another common substitute outside Italy is lardons of smoked bacon.

The dish was created in the middle of the 20th century.[3]

As with many recipes, the origins of the dish and its name are obscure.

The dish forms part of a family of dishes involving pasta with bacon, cheese, and pepper, such as spaghetti alla gricia. Indeed, it is very similar to the Italian pasta cacio e uova, dressed with melted lard and mixed eggs and cheese.[4]

There are many theories for the origin of the name, which may be more recent than the dish itself.[4] Since the name is derived from carbonaro (the Italian word for charcoal burner), some believe the dish was first made as a hearty meal for Italian charcoal workers.[1] In parts of the United States the etymology gave rise to the term “coal miner’s spaghetti”. It has even been suggested that it was created as a tribute to the Carbonari (“charcoalmen”), a secret society prominent in the early, repressed stages of Italian unification.[19] It seems more likely that it is an urban dish from Rome,[20] although it has nothing to do with the Roman restaurant of the same name.[21]

The name may also have derived from “Carbonada”, the word for bacon in central Italy’s dialect.[22]

Pasta alla carbonara is unrecorded before the Second World War; notably, it is absent from Ada Boni‘s 1930 La Cucina Romana. The dish is first attested in 1950, when it was described in the Italian newspaper La Stampa as a dish sought by the American officers after the allied liberation of Rome in 1944.[23] It was described as a Roman dish, when many Italians were eating eggs and bacon supplied by troops from the United States.[24] It was included in Elizabeth David‘s Italian Food, an English-language cookbook published in Great Britain in 1954.[25]

There’s a ton of info about carbonara! Let’s give it a try!

I thought I ought to start at the beginning. I’m pretty sure this and the rice wine spring chicken varieties are the first that TTL shared with the world and it just made sense to go with those to begin Meet The Manufacturer. Here’s a little about Shaoxing wine, featured in this variety from Wikipedia –

Shaoxing wine (Shaohing, Shaoshing) is one of the most famous varieties of huangjiu, or traditional Chinese wines, fermented from rice. It originates from the region of Shaoxing, in the Zhejiang province of eastern China. It is widely used as both a beverage and a cooking wine in Chinese cuisine. It is internationally well known and renowned throughout mainland China, as well as in Taiwan and Southeast Asia.[1]

Meet The Manufacturer: #3033: TTL Bolognese Red Wine Sauce Instant Noodle – Taiwan

Meet The Manufacturer: #3035: TTL Bolognese Red Wine Sauce Instant Noodle - Taiwan

Today, we have a traditional Italian variety – from Taiwan? Yup – Italian noodles from Taiwan! Here’s what Wikipedia has to say about bolognese –

Bolognese sauce (UK/ˌbɒləˈnzˈnɛz/US/ˌblənˈjz/;[1] known in Italian as ragù alla bolognesepronounced [raˈɡu alla boloɲˈɲeːze; -eːse]ragù bolognese, or simply ragù) is a meat-based sauce originating from Bologna, Italy, hence the name. In Italian cuisine, it is customarily used to dress tagliatelle al ragù and to prepare lasagne alla bolognese. In the absence of tagliatelle, it can also be used with other broad, flat pasta shapes, such as pappardelle or fettuccine. Genuine ragù alla bolognese is a slowly cooked sauce, and its preparation involves several techniques, including sweatingsautéing and braising. Ingredients include a characteristic soffrittoof onion, celery and carrot, different types of minced or finely chopped beef, often alongside small amounts of fatty pork. White wine, milk, and a small amount of tomato concentrate or tomatoes are added, and the dish is then gently simmered at length to produce a thick sauce.

The earliest documented recipe of an Italian meat-based sauce (ragù) served with pasta comes from late 18th century Imola, near Bologna. A recipe for a meat sauce for pasta that is specifically described as being “bolognese” appeared in Pellegrino Artusi‘s cookbook of 1891. The ragù alla bolognese that is now traditionally associated with tagliatelle and lasagne is somewhat different from Artusi’s recipe. Many traditional variations currently exist. In 1982 the Italian Academy of Cuisine registered a recipe for authentic ragù alla bolognese with the Bologna Chamber of Commerce (incorporating some fresh pancetta and a little milk). In Italy, ragù alla bolognese is often referred to simply as ragù.

Outside Italy, the phrase “Bolognese sauce” often refers to a tomato-based sauce to which minced beef (or pork) has been added; such sauces typically bear less resemblance to ragù alla bolognese being more similar in fact to the ragù alla napoletana from the tomato-rich south of the country. Whereas in Italy ragù is not used with spaghetti,[2] so-called “spaghetti bolognese” has become a popular dish in many other parts of the world.

Alright – let’s give it a try!

  • Lihing – Kadazan-Dusun rice wine from Sabah, Malaysian Borneo
  • Makgeolli – a milky rice wine from Korea

Meet The Manufacturer: #3032: TTL Hua-Diao Dongpo Braised Pork Instant Noodle – Taiwan

Meet The Manufacturer: #3034: TTL Hua-Diao Dongpo Braised Pork Instant Noodle - Taiwan

Today we have something special. I’ve been curious about Dongpo’s Pork for a while and this looks like it’d be a good one. Here’s what Wikipedia has to say about it –

Dongpo pork (traditional Chinese東坡肉simplified Chinese东坡肉pinyindōngpōròu) is a Hangzhou dish[1] which is made by pan-frying and then red cooking pork belly. The pork is cut thick, about 2 inches square, and should consist equally of fat and lean meat. The skin is left on. The mouthfeel is oily but not greasy and the dish is fragrant with wine. The dish is named after the famed Song Dynasty poet and gastronome Su Dongpo.[2]

Legend has it that during Su Dongpo‘s life of poverty during his banishment to Hangzhou, he improved on the traditional process. He first braised the pork, added huangjiu (yellow wine) to make red-braised pork, then slowly stewed it on low heat. In their scholarly work Chinese Gastronomy, Lin Hsiang Ju and Lin Tsuifeng give the recipe “The Fragrance of Pork: Tungpo Pork,” and remark that the “square of fat is named after Su Tungpo, the poet, for unknown reasons. Perhaps it is just because he would have liked it.”[3]

Dongpo Pork experienced three phases of popularity, from first appearance to mainstream appreciation. The history of the dish is said to parallel the experiences of Su Dongpo: from Xuzhou, a northern city of Jiangsu province, where Dongpo pork first appeared under the name of Huizeng pork; to Huangzhou, today Huanggang of Hubei province, where Su Dongpo finalized the method and recipe; and finally to Hangzhou, where Dongpo pork was officially named and became widely known across China.

Okay, anything that begins with ‘legend has it’ makes it immediately taste better. I mean come on – that’s instant fascination. Let’s check it out!

Stewed pork and sauce.

Finished (click to enlarge). Added scallion and a little fried onion. Noodles as usual have a soft character to them. The broth was a salty pork driven one which worked well with the noodle and with the Hua Diao wine. Included braised pork was of excellent quality and very flavorful. 4.75 out of 5.0 stars.  EAN bar code 4710110232678.
