Well, it’s that time again. Since the last The Ramen Rater’s Top Ten Instant Noodles Of All Time list came out , I’ve reviewed 383 different varieties. I want to thank the companies and individuals who have sent me varieties I could not easily get. Incidentally, all of these are reviewed the same way – I follow instructions to the letter and taste each variety before I add any external garnish.. I figure that a naked bowl of noodles every day would be quite boring, plus it has given many ideas on what to add to them. So today we kick off Meet The Manufacturer with a unique variety – pepper and sesame sauce. First, this is black pepper, not hot chill. Second, sesame sauce is completely different from sesame oil. The Ramen Rater Visits Taiwan – Day 3: Taichung Noodle Factories & Taipei’s Huaxi Night Market

Woke up at the Silks Place hotel and had some breakfast. Then we were off to the Tainan rail station. We said goodbye to Darren there and then goodbye to Perry who had to head back to Taipei as he was off to travel on business the next day. The rail stations were really fascinating; almost like a mall to themselves! Tons of people, but everything seems to work very logically. We took the train from Tainan to Taichung where three more noodle factories were to explore! Met Jason, Erickk and Paul and went out for lunch at a hot pot restaurant. Got to try plum drink – kind of tasted like American barbecue sauce to be honest, but went very well with the Taiwanese beef. Was an enjoyable meal for all and then we were off to visit three noodle factories. These factories are all part of a company called Hung Guang. ...see full post

The Ramen Rater Visits Taiwan – Day 1: Arrival & Immersion

A couple of months ago, I was invited by Kyle Kao of Mom’s Dry Noodle – a company in Taiwan – to visit and check out their operation. Just like last time I traveled (last May to Thailand), my wife is pregnant and the trip would happen when she was too far along. Again, just like last time, she said it was alright to go and I was accompanied by my sister Sue. Like many of you know, I can’t see very well so I need a little help when travelling. In the following posts, I will chronicle everything we saw and did while there. #1751: Mom’s Dry Noodle Spicy & Sour Flavor

Here’s a new one that just was released! These varieties by Mom’s Dry Noodle have been pretty impressive. This one’s spicy and sour – sounds quite interesting. I’ve tried such flavors from Malaysia before – kind of a description of Laksa, but being from Taiwan I think this is going to be a lot different. The Ramen Rater’s Top Ten Taiwanese Instant Noodles Of All Time 2014 Edition

Welcome to the 2nd annual The Ramen Rater’s top Ten Taiwanese Instant Noodles Of All Time – the 2014 edition. In the last year, I’ve tried a slew of new varieties from Taiwan that were just amazing. Really discovered some great new products that I think everyone should try! What’s special this time is that I’m actually going to be in Taiwan during a layover on my trip to Malaysia! Figured I’d put this out a week early as it’ll be quite hard to post when I’m overseas. This is a list comprised of the best of the best of the 127 different varieties of instant noodles that I’ve tried that were made in Taiwan. As a side note – I’m also going to be traveling through Singapore and then my destination of Malaysia – there will be top ten lists for those two countries coming as well as soon as I’ve reviewed enough varieties to have a wide sampling. #1488: Mom’s Dry Noodle Sichuan Spicy Flavor

After trying the other Mom’s Dry Noodle variety a few days ago, I decided I really wanted to give their Sichuan Spicy one a try too. As I researched videos to add to their Onion Oil & Shrimp variety, I kept seeing this one mentioned. I also have been curious because they also sent a couple little jars of the paste – the spicy paste! Thought maybe I’d saute my garnish in it today. I was contacted by a fellow named Kyle from Taiwan a few weeks ago and asked if I’d like to sample his company’s noodles. Mom’s Dry Noodle? Sure, why not!  It’s pretty exciting – out trip to Malaysia in coming very soon – like in ten days we’re leaving! There’s a layover in Taipei and I’m really excited to be able to actually be in Taiwan, albeit in the transit area and only for two hours, but it’s going to be amazing! These are what they call ‘dry noodles’ over in Taiwan; they’re served without a broth.
