One of my favorite styles of curry would have to be green curry. It’s very different from the others – a kind of crisp and savory flavor rolled into one. This is really exciting to try – curry from Taiwan in collaboration with a company from Thailand. Very curious. Been waiting a couple weeks to hit this up, so let’s go!

Finished (click to enlarge). Added baked chicken, fresh basil, red and green bell pepper, white onion, and crispy fried garlic. As with the red curry, the noodles are soft and plentiful. The green curry flavor is throughout and just the right balance. Another excellent Thai style variety in this new range. 5.0 out of 5.0 stars.  EAN bar code 4717011158205.

Here’s one I found up in Canada – can’t remember where. Green curry is one of my favorite flavors, however not one that I think I’ve ever seen coming out of China. Sichuan Baijia has been coming out with more and more different varieties – and different little cartoon characters on their packaging. Let’s give this one a try and see how it fares.

Finished (click to enlarge). Added Salad Cosmo mung bean sprouts, coriander, fried garlic, shrimp, lemongrass fried tofu and togarashi. The sweet potato vermicelli was crosscut a couple times with a pair of kitchen scissors to make them easier to manage. They has a standard kind of sloppy character and cooked up nicely. The broth on the other hand was such a letdown! I was really anticipating that this would be my new favorite variety from this company, but the blandness just was too much to bear. Not a salty component to be found, so while it tasted like green curry and had a nice thickness, it just didn’t have what it needed. Sad. 1.0 out of 5.0 stars.  EAN bar code 6926410334952.

Finished (click to enlarge). Added chicken seasoned with NuTek Salt For Life, red bell pepper, spring onion and Salad Cosmo mung bean sprouts. The vermicelli hydrated pretty well but was slightly tough which was a surprise. The notion that this was akin to pasta kind of seems evident here. I find the gauge too thick. The green curry flavor is pretty good – could have used a slight bit more. All in all, tasty. 4.5 out of 5.0 stars/. JAN bar code 4902388014906.

The noodles are interesting – while they have the tension and chew of something that I would at first glance think a rice noodle, these are indeed wheat noodles according to the labeling. They came out nicely – good chew and gauge. The broth is a luxuriant green curry flavor with a nice crescendo and little peaks of spiciness. Perfect there. The included bits of greenery and augmented with rings of chilli pepper which are pleasing to the eye as well as the palate. 5.0 out of 5.0 stars. EAN bar code 8885014951010.

I was contacted by a guy from Singapore recently about some new products. Green curry and black pepper crab flavors he told me – and I was definitely interested in trying! So we start the series today with an interview with Miandom!

Interview With Miandom – Singapore

THE RAMEN RATER> Thank you for agreeing to this interview! To start, can you tell my readers about the history of Miandom?

MIANDOM> Miandom is a joint venture founded by partners in Singapore, Malaysia and China. You will be familiar with our Chinese partner, the founder of Bai Jia Brand, well known for it’s signature Sichuan spicy instant vermicelli. The Singaporean partners are their distributors in the Singapore market, whereas the Malaysian partner is an old friend of the founder of Bai Jia, whom helped founder find his footing in the FMCG business. The Malaysian partner used to oversea bottling plants in Sichuan, China when the founder of Bai Jia decided to enter the FMCG business from the advertising industry. The company is headquartered in Singapore and our production is undertaken in Chengdu, Sichuan, China. The company is currently headed by Harry, a Royal Melbourne Institute of Technology business graduate and Leon, a Purdue business graduate.

TRR> Why the name Miandom?

MIANDOM> Miandom is a portmanteau of the word ‘Mian’, which means noodles in Mandarin and ‘Dom’, from the word Kingdom. It is our aspiration for Miandom Noodles to be found in Mainstream markets around the world.

TRR> Can you tell us about the varieties of noodles you make?

MIANDOM> Our current noodle range is focused on South-east Asian flavors with an emphasis on using our proprietary non-fried air dried mini-flat noodles. We currently have 2 flavors, Black Pepper Crab and Green Curry Shrimp. Black Pepper Crab is an iconic Singaporean dish whereas Green Curry Shrimp is really a derivative of the Green Curries that Thailand is famous for.

TRR> Your company is located in Singapore. Can you tell us a little about your locale?

MIANDOM> Singapore is located right in the middle of Southeast Asia and as an entrepot, is a blissful mixed of several culture. Our food reflects this entrepot heritage. Singapore is set to be heavily featured in the upcoming film, Crazy Rich Asians (We do not sponsor the film in anyway). We are certainly far from crazy but the broths for our instant noodles are crazily rich!
5. How does your noodle making process differ from other instant noodle manufacturers?
Our approach to making instant noodles is 2 pronged, namely the broth and instant noodle
block. Our broths are derived from quality ingredients blended into a thick, rich paste, giving the soup a quality that is comparable to those found in restaurants. Secondly, our noodles are nonfried and made in a proprietary process that results in a springy texture.

TRR> How do you decide on what varieties to produce?

MIANDOM> The initial phase of the process is a lot simpler than what you would imagine. There’s a lot of discussion internally and externally about what type of flavours we should produce. Generally, everyone of us already has some idea of what makes a good, hearty bowl of noodles, and it’s all a matter of identifying what flavours are rarely explored and what we can do about it. For example, Black Pepper Crab was very quickly identified as a Singaporean delicacy, and while there are other brands out there who have already attempted to bring this flavour to the market, we believe that none of them has been successful in capturing the essence of what makes the dish great in the first place: the savoury black pepper sauce complementing but not overpowering the already strong crab flavour. Once we’ve identified these elements as essential to the dish itself, we work on creating a flavour profile that closely matches this taste, using as many of the same ingredients as we can, while at the same time tweaking the texture slightly to ensure that it becomes a perfect partner to our non-fried mini-flat noodles.

TRR> How many noodle products do you produce every year?

MIANDOM> We currently produce 2 flavors in 4 Skus but plan to introduce new 2-3 new flavors each season.

TRR> Apart from noodles, are there other products you produce or plan to produce?

MIANDOM> We currently plan to focus on our instant noodles range.

TRR> Can you suggest pairings for your products, like meats, seafood or vegetables?

MIANDOM> Crab meat or crab sticks will go really well with our Black Pepper Crab flavor. Adding a small squeeze of fresh lime juice as well as fresh curry leaves will go a long way in enhancing our Green Curry Shrimp, add some shrimp for protein.

TRR> A lot of people are concerned with their sodium intake. How would you recommend people enjoy your product as part of a healthy meal?

MIANDOM> While our sodium content is admittedly average in the industry, we try to mitigate it by having our noodles non-fried.

TRR> Are you involved in in your local community or participate in charities?

MIANDOM> Not at the moment.

TRR> Are there any new products coming soon?

MIANDOM> Yes, we are planning to launch several new flavors, including Singapore’s famous Chilli Crab. That is admittedly a hard flavor to master!

TRR> In what countries are your products available?

MIANDOM> We can be found in Australia, Britain, Canada, China, Japan and USA. In the US

TRR> When you make noodles for yourself, what do you like to add to them to make them extra
special?

MIANDOM> We love to add extra ingredients to jazz it up and make it an all rounded meal. For flavors that are curry based, I will go one step further and use milk instead of water as a base. However, for Miandom Tasty Asia Range, nothing needs to be added! 😉

The noodles are thick and chewy – very premium. The broth has a very rich miso flavor that had a little thickness and a nice oiliness. The vegetables and bits hydrated perfectly – nice bits of ground meat and menma float happily about and are of good quality. Original review

First, the noodles have a little bit thicker a gauge than most instant varieties. Indeed they are premium although a slight bit softer than one might expect. The broth is a sea of rich pork flavor – different than many. As a matter of fact, this really REALLY has a nice pork flavor; most pork varieties don’t have a great pork taste as the pork taste they do have get overshadowed by saltiness. The vegetables hydrated well and the pork was very good. Original review

So the noodles are broad and flat with a light chew and an excellent quantity. The broth is a tour de force of beef taste. It has a good thickness/oiliness to it as well as a good flavor. Indeed as expected, there’s a decent punch of spiciness. Indeed, the chunks of beef are of good size and quality. Moreover, the liquid with the beef in the retort pouch add depth to the broth. Finally, little rings of chilli pepper are here and there, joining the party. Original review

Okay so first off, this is a heavy bowl. There’s a huge retort pouch in here full of beef and beef tendon. The noodles are wide and have a great chew and the broth has a nice flavor. But the start of the show is that braised beef and tendon – it’s perfect and there’s just so much of it. Very impressive! Original review

Talk about amazing. Now, on most of these bowls, you’ll notice I’ve added my own garnishes. I don’t count them in my reviewing – everything is reviewed prior to any additions I make. This is one where I’ve added nothing and just look at it! This one had very good noodles to start off. The broth was a very thick prawn infused decadent flavor spectacle. Then there’s the little crunchy topping and the other garnish they provide and this is just amazing stuff. Wow. Floored. Original review

Wow – I’m so freaking impressed with this one. First, there are two bowls. Peel back the lid of the first bowl and add boiling water. After a short time, you poke holes in the lid and drain the liquid into the second. A sachet of soup base is added and you have a soup with lots of corn and herbs. Next, a huge sachet with chicken and vegetables boasts a great spicy green curry flavor which mixes with the noodle. A really amazing product which is unique and delicious. This is Little Cook Thailand Green Curry Instant Noodle’s second year in the number one spot in a row – congratulations! Original review

Finished (click to enlarge). Added Salad Cosmo mung bean sprouts, tofu puff and coriander. The udon is thick and soft. I really enjoyed it with this green curry broth – I’ve had these udon with other broths and not found them as much to my liking, but here they shine. The broth is thick and giving great salty green curry flavor. Bits of broccoli in there among other bits. Really a nice green curry – spicy, but not strong overpowering spiciness. 4.75 out of 5.0 stars. JAN bar code 4902105241301.

I’ll be honest – I’m a huge fan of green curry. I’ve loved it for y ears. This one from Yum Yum sounds interesting and I’m definitely curious how it stacks up against other I’ve tried. Here’s a little from Wikipedia about green curry –

Green curry (ThaiแกงเขียวหวานRTGSkaeng khiao wanpronounced [kɛ̄ːŋ kʰǐaw wǎːn], literally sweet green curry) is a Central Thai variety of curry.

Apart from a main protein, traditionally fish, fish balls, or meat, the other ingredients for the dish consist of coconut milk, green curry pastepalm sugar, and fish sauceThai eggplant (aubergine), pea aubergine, or other green or whitish vegetables[4] and even fruit are often included.[3][5][6] The consistency of its sauce varies with the amount of coconut milk used. Green curry paste is traditionally made by pounding in a mortar green chillies, shallots, garlic, galangallemongrasskaffir lime peel, cilantro roots (coriander) and cumin seeds, white peppercornsshrimp paste and salt.[3][7]

The noodles have that trademark Thai crumble to them with a nice backbone which gives a great mouthfeel. The broth is a mellow green curry with rich taste and good oiliness. 5.0 out of 5.0 stars. The noodles as usual plumped up nicely as they engorged themselves on the broth. good gauge, good chew. The broth is definitely strong and worthy of the top ten spicy list – it means business! Sichuan chilli heat is abundant. The oiliness is great and the hydrated vegetable bits are good as well – a tasty spicy bowl. Original review

The noodles are thick and chewy – very premium. The broth has a very rich miso flavor that had a little thickness and a nice oiliness. The vegetables and bits hydrated perfectly – nice bits of ground meat and menma float happily about and are of good quality. Original review

The broth has a nice saltiness and soy flavor with just a little touch of sweetness. The pork flavor finds it’s way into the broth as well which is spectacular. The pork has a nice sweetness and ‘fall off the bone’ texture to it which is pure delicacy. The army of decent sized slices of narutomaki were amazing, and the spring onion and bamboo shoots were perfect. A bowl of amazing taste and quality. Original review

Raoh’s noodles are great – premium and chewy. The broth is thick and rich with a strong shoyu taste which satisfies. The garnish includes a nice slice of chashu pork. Original review

First, the noodles have a little bit thicker a gauge than most instant varieties. Indeed they are premium although a slight bit softer than one might expect. The broth is a sea of rich pork flavor – different than many. As a matter of fact, this really REALLY has a nice pork flavor; most pork varieties don’t have a great pork taste as the pork taste they do have get overshadowed by saltiness. The vegetables hydrated well and the pork was very good. Original review

So the noodles are broad and flat with a light chew and an excellent quantity. The broth is a tour de force of beef taste. It has a good thickness/oiliness to it as well as a good flavor. Indeed as expected, there’s a decent punch of spiciness. Indeed, the chunks of beef are of good size and quality. Moreover, the liquid with the beef in the retort pouch add depth to the broth. Finally, little rings of chilli pepper are here and there, joining the party. Original review

TTL stands for Taiwan Tobacco & Liquor and indeed there’s a sachet of rice wine in here! Add to that a big retort pouch full of decent sized chunks of chicken, good noodles and garnish, This is definitely a bowl to seek out and try. Original review

It’s red. It’s got a thick spicy and sweet sauce. Chewy ramyun noodles. It’s got topokki. This was a real find – Just looking at the picture makes me want some right this instant. One of the most wonderful bowls of noodles I’ve ever had. Slipping from first place last year. Original review

Talk about amazing. Now, on most of these bowls, you’ll notice I’ve added my own garnishes. I don’t count them in my reviewing – everything is reviewed prior to any additions I make. This is one where I’ve added nothing and just look at it! This one had very good noodles to start off. The broth was a very thick prawn infused decadent flavor spectacle. Then there’s the little crunchy topping and the other garnish they provide and this is just amazing stuff. Wow. Floored. Original review

Wow – I’m so freaking impressed with this one. First, there are two bowls. Peel back the lid of the first bowl and add boiling water. After a short time, you poke holes in the lid and drain the liquid into the second. A sachet of soup base is added and you have a soup with lots of corn and herbs. Next, a huge sachet with chicken and vegetables boasts a great spicy green curry flavor which mixes with the noodle. A really amazing product. Original review
