This is the seventh year of the Top Ten Taiwan Instant Noodles list! Every year, I’m truly amazed at the innovation and unique varieties coming from the beautiful island of Taiwan. If you haven’t had the experience of visiting, you really should – the food, the culture – it truly has been a life changing experience for me. Growing up, all I knew of Taiwan was labels on products that simply said ‘made in Taiwan’ – but it so much more. One aspect is the noodle, and they’re really unique and delicious. This is a list of my favorite out of the reviews I’ve done up to number 3,284. Many images you will see have garnish, however only the base product before any is added is what’s reviewed, as in all of my reviews. I hope you enjoy this year’s list and consider trying some of these great varieties if you’ve not tried before – they’re really great! The noodles have a flat and broad gauge and an excellent chewiness I’ve come to expect from the A-Sha line of products. The flavor is very good – a kind of spicy, salty, slightly sweet and then this savoriness to it – lots of spices that I can really only describe as tasking like Taiwan. Original review

This one I enjoyed immensely – lots of noodles, but the broth was the show stopper. The combo of the liquor and the rich beef broth was very savory. Add vegetables and real beef from the retort pouch and there’s why it’s on this list. Original review

A very recent review. Found this at a local store and the combo of ginger and sesame was intriguing. Take a thin noodle and combine it aptly with the aforementioned flavors and there you go. Very tasty ginger and sesame are in the forefront and it’s just plain umami incarnate. Original review

A wide noodle with scalloped edges. These have the bonus of a thin edge and thicker center, giving a delicate as well as hearty aspect. The flavor is very good – a soy bump, some onion hit, then the Sichuan pepper oil. It all works together magnificently. Original review

This bowl, in fact, is two bowls. One you steep the noodles in. The second? Drain the broth from the first by poking holes in the lid and pour into it. The noodle is accompanied by a spicy green curry and chunks of vegetable and real chicken. I think it’s safe to say most people who follow this website are keen on the fact that I love Thai food and I love curry. What’s neat here is that these curries – one red and one green – pair so well with a Taiwanese noodle – and naturally so. Savory curries and dry noodles marry in such a way that a perfect balance of two cuisines harmonize rather than find conflict or dissonance. Impressive! Original reviews 1 & 2

The noodles came out with a very nice chew. They aren’t mushy whatsoever and have a confident backbone. The flavor is very good as well. The notes of sesame, Sichuan pepper oil, Sichuan pepper in the dry mix, sesame sauce as well as soy sauce all work together and play well with each other; nobody’s feet get stepped on. Simple yet complex. Original review

For a long time, I’ve really enjoyed this style of noodle from Taiwan. It’s wide, with a center line which is thicker, and the sides are thinner – which gives them a very unique and wonderful mouthfeel. I’ve also always thought that these would just sing is in a broth (usually they are presented with a combination of sauces but no broth). The soup is rich with a strong beef flavor and hint of Sichuan peppercorn that do not overwhelm. The nice part is the inclusion of real beef in here. It should be noted that there is a special version of this that comes out during Lunar New Year which includes Wagyu beef – very expensive at a whopping $15USD per serving!, but very tasty as well. Spiciest Instant Noodles 2020

Usually, this Taiwan list would have been released 3 weeks ago – the spicy list would’ve been released last month – what gives?! Well, I’ve been busy. With my 3 year old son Miles home from preschool all summer, time has been spent with him a lot more. Setting up a green screen is a lot more difficult with him and his little sister Miriam running around like banshees in our apartment. I’ve been busy with something else as well…

The Ramen Rater Diet

In October of 2018, my doctor (who is Taiwanese I should mention!) Gave me a talk. It was the talk I’d gotten many times from him and other doctors: you need to lose weight. He said also that my cholesterol was very high. He told me this on the right day at the right time I suppose and I decided to go all in. I did my first The Ramen Rater Diet video in April after I visited my doctor in April, having lost 65 pounds. I’ve kept it up and lost a lot more since then, and the next video will be out towards the end of October – after a year of eating healthy and exercising every day (I walk a lot – up to 25 miles in a day), I’ll do a big update and share more of what I do and how I do it with you. Many folks have taken my advice and are getting healthier as well, which is very humbling. I think if I can make a big change like this, anyone can!

Two weeks. Two long weeks. I haven’t done a review in two weeks!! Our apartment got remodeled, plus I had a sinus infection that basically knocked out my sense of taste. Yeah – that wasn’t cool at all. But I’m back – back to walking, and today back to reviewing. The remodel is done and I’m enjoying my noodles once again!

I think the fact that I love curry is probably on my sleeve. This is something I am very fascinated with – a collaboration between a Thai company and a Taiwanese company. How’s it going to taste? I’ve not a clue, but if it’s anything like Mom’s Dry Noodle has put out before, I know I’m in for a treat. Let’s find out!

Looks like carrot, cabbage and other vegetables.

Finished (click to enlarge). Added scallions, mushroom, Salad Cosmo mung bean sprouts, boiled beef, carrot, baby bok choy and crisp garlic. Noodles are just perfect – wide and chewy. The broth has a strong Sichuan pepper flavor to it that by itself just doesn’t do it for me; just overwhelms. I won’t say that Included vegetable hydrated nicely. The first Indomie variety on the list in years and it’s really amazing. Basically take their Mi Goreng Rendang and include a sachet of real rendang in a retort pouch. This comes after recently hearing that Indomie Rendang is hard to find here in the United States, something I was surprised to hear since it’s such a popular product and such a good one. They work well with the broth which is like a mashup of tom yum and green curry. The spiciness and flavors are just great – it might seem like a strange gimmicky kind of thing but definitely not. Since a very young age when my mother would cook curried chicken livers over rice, I’ve absolutely loved curry. This one is just mind blowing and has been on the top ten for years and years. The noodles are thick and chewy  – and have a rustic kind of feel to them. Marry that to the broth which comes from a large sachet of curry paste and one full of coconut milk powder, you end up with a rich, luxuriant experience you’ll love. I should note they also have a version with non-wholegrain noodles which is also very impressive. Original review

Back again with their rich curry noodle, CarJEN brings something very special to the table in their Nyonya Curry Laksa. You dip the paste seen on the spoon into the broth to flavor it and it has little bits of shrimp in there that really are a nice addition. Sweetness, spiciness, richness from coconut milk powder, and a nice plump noodle makes this so tasty and memorable. Original Review

My wife Kit saw this while we were up in Canada and it piqued my curiosity so thought hey let’s give it a try. Noodles are very broad – over an inch. The flavoring is just superb – to use a word I normally don’t, this is yummy. What’s interesting too is that they included meat – at least I thought it was meat – it’s made from soy protein! Unique, delicious, and the highest a Chinese variety has achieved on The Ramen Rater’s Top Ten Instant Noodles Of All Time to date. Congratulations! Original review

Let the prawn-slaught begin! Returning to the #2 spot this year, we have a Red Chef variety that just gives and gives when it comes to sweet and savory prawn flavor. This umami bomb has a nice chewy noodle that is complimented by just the sweetest, strongest prawn broth with an excellent thickness and just the right amount of spiciness. What’s more they include a sachet of crispy onions to put on top that round things out so well. If you want to have a prawn freak out, this is an indispensable tool. Original review

For the fourth year in a row, Prima Taste wins with it’s excellent Wholegrain Laksa. If  abandoned on an island with only a life supply of instant noodles, I’d want them to be these, period. Hearty artisan noodles which are thick and of good quantity are combined with a broth which has a strong flavor and richness from coconut milk powder. A flavorful and striking noodle dish. Big Changes For Me

Some of you have been noticing I’ve been losing weight – thank you! In fact I’ve been working hard on that. Reviews I do are usually involving me eating maybe 5% of a bowl of noodles, if that. Everything else goes down the drain.

I keep my regime to around 1200~1500 calories a day. I’ve also been doing a lot of walking with my daughter Miriam. With her stroller decked out with lots of lights and a really loud speaker (I usually play a lot of Primus, Herbie Hancock, Sepultura, Deodato, and Tobacco), we walk all over town. My feet hurt, too! If you put together our walking from April 1st and April 2nd, it comes to 21.12 miles (33.989km)! No, that is NOT a typo. My doctor told me I had high cholesterol back in October and I decided to make some changes. I’ll find out how I’ve done later this month and let you guys know how I’ve done so far.

This is the highest position a Taiwanese variety has achieved in The Ramen Rater’s Top Ten Instant Noodles Of All Time before – congratulations, Taiwan! For a long time, I’ve really enjoyed this style of noodle from Taiwan. It’s wide, with a center line which is thicker, and the sides are thinner – which gives them a very unique and wonderful mouthfeel. I’ve also always thought that these would just sing is in a broth (usually they are presented with a combination of sauces but no broth). The soup is rich with a strong beef flavor and hint of Sichuan peppercorn that do not overwhelm. The nice part is the inclusion of real beef in here. It should be noted that there is a special version of this that comes out during Lunar New Year which includes Wagyu beef – very expensive at a whopping $15USD per serving!, but very tasty as well. My wife Kit saw this while we were up in Canada and it piqued my curiosity so thought hey let’s give it a try. Noodles are very broad – over an inch. The flavoring is just superb – to use a word I normally don’t, this is yummy. What’s interesting too is that they included meat – at least I thought it was meat – it’s made from soy protein! Unique, delicious, and the highest a Chinese variety has achieved on The Ramen Rater’s Top Ten Instant Noodles Of All Time to date. Congratulations! Original review

Let the prawn-slaught begin! Returning to the #2 spot this year, we have a Red Chef variety that just gives and gives when it comes to sweet and savory prawn flavor. This umami bomb has a nice chewy noodle that is complimented by just the sweetest, strongest prawn broth with an excellent thickness and just the right amount of spiciness. What’s more they include a sachet of crispy onions to put on top that round things out so well. If you want to have a prawn freak out, this is an indispensable tool. Original review

For the fourth year in a row, Prima Taste wins with it’s excellent Wholegrain Laksa. If  abandoned on an island with only a life supply of instant noodles, I’d want them to be these, period. Hearty artisan noodles which are thick and of good quantity are combined with a broth which has a strong flavor and richness from coconut milk powder. A flavorful and striking noodle dish. Big Changes For Me

Some of you have been noticing I’ve been losing weight – thank you! In fact I’ve been working hard on that. Reviews I do are usually involving me eating maybe 5% of a bowl of noodles, if that. Everything else goes down the drain.

I keep my regime to around 1200~1500 calories a day. I’ve also been doing a lot of walking with my daughter Miriam. With her stroller decked out with lots of lights and a really loud speaker (I usually play a lot of Primus, Herbie Hancock and Tobacco), we walk all over town. My feet hurt, too! If you put together our walking from April 1st and April 2nd, it comes to 21.12 miles (33.989km)! No, that is NOT a typo. My doctor told me I had high cholesterol back in October and I decided to make some changes. I’ll find out how I’ve done later this month and let you guys know how I’ve done so far.

Shiitake mushrooms… Hmmm… Curious if I’ll like this one… I wish I liked mushrooms more – my wife loves mushrooms – so does my buddy from Germany. Finished (click to enlarge). Added cucumber, Salad Cosmo mung bean sprouts, and carrot. Noodles came out perfectly – flat and broad with a really great chew to them. They were perfect for the flavor – bit of mushroom throughout and a nice savory sauce. I expected an onslaught of shiitake flavor (which I’m not usually keen on in other varieties)  and found a nice flavor that had a great balance and texture. 5.0 out of 5.0 stars.  EAN bar code 4717011150247.

A wide noodle with scalloped edges. These have the bonus of a thin edge and thicker center, giving a delicate as well as hearty aspect. The flavor is very good – a soy bump, some onion hit, then the Sichuan pepper oil. It all works together magnificently. Original review

Much to my chagrin, TTL keeps coming out with interesting varieties. TTL stands for Taiwan Tobacco and Liquor – and they always have some kind of alcohol with their products. This one comes with a retort pouch will of creamy sauce and pork which is augmented by a sachet of white wine. A sipping soup is made with a separate sachet. The combination is apt and Very delicious. Original review

The noodles came out with a very nice chew. They aren’t mushy whatsoever and have a confident backbone. The flavor is very good as well. The notes of sesame, Sichuan pepper oil, Sichuan pepper in the dry mix, sesame sauce as well as soy sauce all work together and play well with each other; nobody’s feet get stepped on. This is a daily show where I let you watch me cook the instant noodles I review and garnish them! This is an unedited show where I talk directly to you like an old friend. I’ve been wanting to do a show with my wife Kit for a long time, and I finally figured out something she would like. May I proudly present The Chocolate Break – a show where we try different varieties of chocolate we find. I find something to bring and my wife does as well. We then talk about it, try it, and give our opinions on it. It’s been a lot of fun for us and really interesting too! This one really impressed me in the last year and I wanted to have it again. The folks at Mom’s Dry Noodle were kind enough to send another pack of it for review. I thought a fresh taste immediately before finalizing the top ten would be a good plan, and so here we go!

Here’s a little about Dan Dan noodle from Wikipedia –

Dandan noodles or dandanmian (simplified Chinese担担面traditional Chinese擔擔麵) is a noodle dish originating from Chinese Sichuan cuisine. It consists of a spicy sauce containing preserved vegetables (often including zha cai (榨菜), lower enlarged mustard stems, or ya cai (芽菜), upper mustard stems), chili oilSichuan pepper, minced pork, and scallions served over noodles.

Sesame paste and/or peanut butter is sometimes added, and occasionally replaces the spicy sauce, usually in the Taiwanese and American Chinese style of the dish.[1] In this case, dandanmian is considered as a variation of ma jiang mian (麻醬麵), sesame sauce noodles. In American Chinese cuisine, dandanmian is often sweeter, less spicy, and less soupy than its Sichuan counterpart.

Finished (click to enlarge). Added scallion, chashu pork, fried onion, sesame seeds, and an egg. The noodles are so good – chewy but with a giving softness at the same time. The flavor is multilayered – spicy, sesame, soy and then the nice hits of garlic and Sichuan peppercorn.
