One of my favorite styles of curry would have to be green curry. It’s very different from the others – a kind of crisp and savory flavor rolled into one. This is really exciting to try – curry from Taiwan in collaboration with a company from Thailand. Very curious. Been waiting a couple weeks to hit this up, so let’s go!

Finished (click to enlarge). Added baked chicken, fresh basil, red and green bell pepper, white onion, and crispy fried garlic. As with the red curry, the noodles are soft and plentiful. Two weeks. Two long weeks. I haven’t done a review in two weeks!! Our apartment got remodeled, plus I had a sinus infection that basically knocked out my sense of taste. Yeah – that wasn’t cool at all. But I’m back – back to walking, and today back to reviewing. The remodel is done and I’m enjoying my noodles once again!

I think the fact that I love curry is probably on my sleeve. This is something I am very fascinated with – a collaboration between a Thai company and a Taiwanese company. How’s it going to taste? I’ve not a clue, but if it’s anything like Mom’s Dry Noodle has put out before, I know I’m in for a treat. Let’s find out!

Finished (click to enlarge). Added sauteed beef, red and green bell pepper, white onion, pineapple, and fresh basil. Noodles are soft and a very large quantity. They’re a perfect match for the red curry which is aromatic and tasty, however not overwhelming. A very apt pairing with an elegant balance. 5.0 out of 5.0 stars.  EAN bar code 4717011158304.

Looks like carrot, cabbage and other vegetables.

Finished (click to enlarge). Added scallions, mushroom, Salad Cosmo mung bean sprouts, boiled beef, carrot, baby bok choy and crisp garlic. Noodles are just perfect – wide and chewy. The broth has a strong Sichuan pepper flavor to it that by itself just doesn’t do it for me; just overwhelms. I won’t say that Included vegetable hydrated nicely. Definitely one that works better with your own garnish. 3.0 out of 5.0 stars.   EAN bar code 4919011150780.

Top Ten Best Instant Noodles Of All Time 2019

The first Indomie variety on the list in years and it’s really amazing. Basically take their Mi Goreng Rendang and include a sachet of real rendang in a retort pouch. This comes after recently hearing that Indomie Rendang is hard to find here in the United States, something I was surprised to hear since it’s such a popular product and such a good one. This is Sau Tao’s first appearance on the list. A Thai flavor is delivered masterfully – broth has a great richness and crispness of tom yum kung – spicy and lemongrass and shrimp notes play together very well. Original review

Another one returning to The Ramen Rater’s Top Ten Instant Noodles Of All Time list, Red Chef’s Green Tom Yum Soup Noodles feature a fried noodle with a great mouthfeel and quantity. They work well with the broth which is like a mashup of tom yum and green curry. The spiciness and flavors are just great – it might seem like a strange gimmicky kind of thing but definitely not. I love the new and this is a new flavor for the instant noodle world. Original review

#6: Prima Taste Singapore Curry Wholegrain La Mian – Singapore

Top Ten Best Instant Noodles Of All Time 2019

Since a very young age when my mother would cook curried chicken livers over rice, I’ve absolutely loved curry. This one is just mind blowing and has been on the top ten for years and years. The noodles are thick and chewy  – and have a rustic kind of feel to them. Marry that to the broth which comes from a large sachet of curry paste and one full of coconut milk powder, you end up with a rich, luxuriant experience you’ll love. I should note they also have a version with non-wholegrain noodles which is also very impressive. Original review

Top Ten Best Instant Noodles Of All Time 2019

Back again with their rich curry noodle, CarJEN brings something very special to the table in their Nyonya Curry Laksa. You dip the paste seen on the spoon into the broth to flavor it and it has little bits of shrimp in there that really are a nice addition. Sweetness, spiciness, richness from coconut milk powder, and a nice plump noodle makes this so tasty and memorable. Original Review

#4: A-Sha Gourmet Braised Beef Noodle Soup – Taiwan

The Ramen Rater's Top Ten Instant Noodles Of All Time 2019 Edition

This is the highest position a Taiwanese variety has achieved in The Ramen Rater’s Top Ten Instant Noodles Of All Time before – congratulations, Taiwan! For a long time, I’ve really enjoyed this style of noodle from Taiwan. It’s wide, with a center line which is thicker, and the sides are thinner – which gives them a very unique and wonderful mouthfeel. I’ve also always thought that these would just sing is in a broth (usually they are presented with a combination of sauces but no broth). The soup is rich with a strong beef flavor and hint of Sichuan peppercorn that do not overwhelm. The nice part is the inclusion of real beef in here. It should be noted that there is a special version of this that comes out during Lunar New Year which includes Wagyu beef – very expensive at a whopping $15USD per serving!, but very tasty as well. My wife Kit saw this while we were up in Canada and it piqued my curiosity so thought hey let’s give it a try. Noodles are very broad – over an inch. The flavoring is just superb – to use a word I normally don’t, this is yummy. What’s interesting too is that they included meat – at least I thought it was meat – it’s made from soy protein! Unique, delicious, and the highest a Chinese variety has achieved on The Ramen Rater’s Top Ten Instant Noodles Of All Time to date. Congratulations! Original review

Let the prawn-slaught begin! Returning to the #2 spot this year, we have a Red Chef variety that just gives and gives when it comes to sweet and savory prawn flavor. This umami bomb has a nice chewy noodle that is complimented by just the sweetest, strongest prawn broth with an excellent thickness and just the right amount of spiciness. What’s more they include a sachet of crispy onions to put on top that round things out so well. If you want to have a prawn freak out, this is an indispensable tool. Original review

For the fourth year in a row, Prima Taste wins with it’s excellent Wholegrain Laksa. If  abandoned on an island with only a life supply of instant noodles, I’d want them to be these, period. Hearty artisan noodles which are thick and of good quantity are combined with a broth which has a strong flavor and richness from coconut milk powder. A flavorful and striking noodle dish. Big Changes For Me

Some of you have been noticing I’ve been losing weight – thank you! In fact I’ve been working hard on that. Reviews I do are usually involving me eating maybe 5% of a bowl of noodles, if that. Everything else goes down the drain.

I keep my regime to around 1200~1500 calories a day. I’ve also been doing a lot of walking with my daughter Miriam. With her stroller decked out with lots of lights and a really loud speaker (I usually play a lot of Primus, Herbie Hancock, Sepultura, Deodato, and Tobacco), we walk all over town. My feet hurt, too! If you put together our walking from April 1st and April 2nd, it comes to 21.12 miles (33.989km)! No, that is NOT a typo. My doctor told me I had high cholesterol back in October and I decided to make some changes. I’ll find out how I’ve done later this month and let you guys know how I’ve done so far.

Thick stuff.

Finished (click to enlarge). Added cucumber, Salad Cosmo mung bean sprouts, and carrot. Noodles came out perfectly – flat and broad with a really great chew to them. They were perfect for the flavor – bit of mushroom throughout and a nice savory sauce. I expected an onslaught of shiitake flavor (which I’m not usually keen on in other varieties)  and found a nice flavor that had a great balance and texture. 5.0 out of 5.0 stars.  EAN bar code 4717011150247.

The noodles have a flat and broad gauge and an excellent chewiness I’ve come to expect from the A-Sha line of products. The flavor is very good – a kind of spicy, salty, slightly sweet and then this savoriness to it – lots of spices that I can really only describe as tasking like Taiwan. Original review

A wide noodle with scalloped edges. These have the bonus of a thin edge and thicker center, giving a delicate as well as hearty aspect. The flavor is very good – a soy bump, some onion hit, then the Sichuan pepper oil. It all works together magnificently. Original review

This bowl, in fact, is two bowls. One you steep the noodles in. The second? Drain the broth from the first by poking holes in the lid and pour into it. The noodle is accompanied by a spicy green curry and chunks of vegetable and real chicken. Start with a thin kind of rectangular noodle with a strong chew. The flavor that comes with it is a sweet and savory shallot and scallion oil – and it works so well. Who would think something so simple could be so delightful. Original review

#2: TTL White Wine Carbonara Noodle – Taiwan

Much to my chagrin, TTL keeps coming out with interesting varieties. TTL stands for Taiwan Tobacco and Liquor – and they always have some kind of alcohol with their products. This one comes with a retort pouch will of creamy sauce and pork which is augmented by a sachet of white wine. A sipping soup is made with a separate sachet. The combination is apt and Very delicious. Original review

The noodles came out with a very nice chew. They aren’t mushy whatsoever and have a confident backbone. The flavor is very good as well. The notes of sesame, Sichuan pepper oil, Sichuan pepper in the dry mix, sesame sauce as well as soy sauce all work together and play well with each other; nobody’s feet get stepped on. Simple yet complex. Original review

This is a daily show where I let you watch me cook the instant noodles I review and garnish them! This is an unedited show where I talk directly to you like an old friend. New episodes come out daily at 2pm (1400h GMT-8).

I’ve been wanting to do a show with my wife Kit for a long time, and I finally figured out something she would like. May I proudly present The Chocolate Break – a show where we try different varieties of chocolate we find. I find something to bring and my wife does as well. We then talk about it, try it, and give our opinions on it. It’s been a lot of fun for us and really interesting too! I was always hunting for new varieties of instant noodles at the store – but now she’s enjoying the hunt for something new and unique to try. This one really impressed me in the last year and I wanted to have it again. The folks at Mom’s Dry Noodle were kind enough to send another pack of it for review. I thought a fresh taste immediately before finalizing the top ten would be a good plan, and so here we go!

Here’s a little about Dan Dan noodle from Wikipedia –

Dandan noodles or dandanmian (simplified Chinese担担面traditional Chinese擔擔麵) is a noodle dish originating from Chinese Sichuan cuisine. It consists of a spicy sauce containing preserved vegetables (often including zha cai (榨菜), lower enlarged mustard stems, or ya cai (芽菜), upper mustard stems), chili oilSichuan pepper, minced pork, and scallions served over noodles.

Sesame paste and/or peanut butter is sometimes added, and occasionally replaces the spicy sauce, usually in the Taiwanese and American Chinese style of the dish.[1] In this case, dandanmian is considered as a variation of ma jiang mian (麻醬麵), sesame sauce noodles. In American Chinese cuisine, dandanmian is often sweeter, less spicy, and less soupy than its Sichuan counterpart.

Finished (click to enlarge). Added scallion, chashu pork, fried onion, sesame seeds, and an egg. The noodles are so good – chewy but with a giving softness at the same time. The flavor is multilayered – spicy, sesame, soy and then the nice hits of garlic and Sichuan peppercorn. Well, it’s that time again. Since the last The Ramen Rater’s Top Ten Instant Noodles Of All Time list came out , I’ve reviewed 383 different varieties. I want to thank the companies and individuals who have sent me varieties I could not easily get. Incidentally, all of these are reviewed the same way – I follow instructions to the letter and taste each variety before I add any external garnish.. I figure that a naked bowl of noodles every day would be quite boring, plus it has given many ideas on what to add to them. Gookmul really made their mark with their special lobster variety last year. But I think this eclipses the taste of those by a lot. The noodles are perfectly chewy and of high quality with a great mouthfeel. What’s amazing about this one is the noodles get ensconced in a luxuriant sauce with lots of real pork – it’s kind of like having barbecue pulled pork noodles and it’s simply delectable and memorable. Last year, Nissin Hong Kong’s Black Garlic Oil version was on the list. It was extremely good, but this one really impressed me. The noodles are thin and straight with a very nice chew. The broth is a melange of spicy and milky tonkotsu that had a deep and rich flavor. The heat isn’t so strong you’ll be running for the hills, but it’s respectable insofar as it is spicy but doesn’t overwhelm the underlying tonkotsu flavor. Original review

I’ve long said that the Taiwanese are masters of simplicity when it comes to food and this one is no exception. We start with a thin noodle, one that is not fried but dried in the hot sun – no sun, no noodles. The flavor is a combination of chilli oil, sesame paste, soy sauce and a dry combo of Sichuan peppercorn hulls and garlic. Finally, the end result is a multi-layered balance of flavors that harmonize perfectly. Original review

Innovation is something I hold in high regard – I’ve tried almost 3,000 kinds of instant noodles from around the world – new flavors are definitely ones that catch my eye and taste buds. This one has noodles that plump up nicely. The broth is strong and kind of reminds me of a cross between a Malaysian tom yum crossed with green curry spiciness. It works very well and is very tasty. This one has been on the list for three years now and for good reason. The noodles are thick and chewy – and while they are wholegrain they aren’t coarse on the chew – they’re hearty and rustic. The broth comes from two large sachets – one full of curry paste and one of coconut powder. The richness and depth of flavor here is sensational and delights the palate with flavors that are balanced and superb. Original review

#4: CarJEN Nyonya Curry Laksa – Malaysia

Hailing from Melaka, this Malaysian variety catches the eye and delights the senses. A noodle with a great gauge and chew sets the scene. Finally, a broth with a nice rich and creamy flavor augmented by coconut milk powder and a special ‘dipping sauce’ that has a sweet and spicy shrimp hit just makes everything so good. A truly delightful and enticing scent brings one to the bowl with anticipation and hunger. Original review

Over the years, this variety went from #1 to being off of the list last year. This was due to numerous recipe changes I just didn’t like. Well, this year they’ve done it. The recipe has uniquely changed once again and it’s definitely returned to it’s roots with a flavor I love. The noodle plumps up very well as with all MyKuali varieties – and then the broth. A big sachet of curry paste sets the stage along with creamer and seasoning. The end result is a incredibly strong and spicy curry that is all in all unique and mesmerizing. Original review

Once again, this newcomer to the list for 2018 brings their game to the table. The great gauge and gauge to the noodle, and then the broth just takes over. A sweet and extremely strong prawn flavor. A good level of spiciness is here as well and works with the broth rather than overwhelms it. The broth is thick and oiliness is on point. Rounding things out is a sachet of fried onions – good sized ones that add a very agreeable crunch on top. Authentic and wonderful. Original review

Prima Taste’s Laksa sits atop the list for the third year in a row. Its chewy wholegrain noodles are hearty and artisanal – never gritty and just a pleasure to chew with a cosmic mouthfeel. Moreover, the broth is a combination of a laksa paste sachet which is large and full of premium ingredients. The broth is made fuller and creamy with the second sachet, a large one filled with coconut milk powder. All in all, if I had only one noodle to eat on a deserted island, this would be the one. All in all, it’s just exquisite in taste and to the eye. Original review
