This one was sent to me by Jen from Australia – thanks again! Chicken… Pretty standard flavor. It seems that the very first instant noodle any company produces is chicken. Everyone likes chicken! Right? Well, I like chicken. Let’s give it a go!
A couple years ago, I had the opportunity to check out a course taught by Dr. Gary Hou at the Wheat Marketing Center in Portland, OR. It was a short course on making instant noodles and really fascinating. It’s coming up again and as a thank you for letting everyone know about it, Dr. Hou sent me something!
You’re probably wondering what the deal is here. Well, I’ll tell you! These were sent along with a slew of other Indonesian (yep – it’s from Indonesia!) instant noodles. These are made by Indofood, the same company that makes Indomie! They only take 4 minutes to make, and I think they’re unique enough that I’d review them. Thank you to my friend from Indonesia for sending me noodles I could never lay my hands on here! Let’s check ’em out!
Recently, I was given the great opportunity to visit the Wheat Marketing Center in Portland, Oregon. People who work with noodles and other wheat products from all over the world come here to take part in the Asian Noodle Technology and Ingredient Application Short Course. The course is taught by Dr. Gary Hou, an expert in the production of wheat noodles like ramen and yakisoba. I found out about the course via a news feed I follow and decided to email Dr. Hou and see if I could cover the instant noodle workshop for The Ramen Rater. I was very pleased when he answered in the affirmative, and so on March 27th, we got up early, hopped in the car and drove to Portland! In the following pictures and video, I’ll describe how instant noodles start as raw ingredients and become the blocks of noodles we all know so well. I’ll go through everything from photos first, and then there’s a video at the bottom of the process. Enjoy!

Here’s the first review of the Sun Noodle Meet The Manufacturer spotlight, their Yakisoba. Yakisoba is one of my favorite Japanese noodle dishes. What’s nice is that the flavoring contains one of my favorite flavors – Worcestershire sauce!

Welcome to another installment of Meet The Manufacturer! This time, it’s Sun Noodle – purveyor of fresh ramen noodles and other fine products. Here’s an interview I did with them via email.
Here’s one I found at the Bellevue, Washington Uwajimaya. Pricy stuff – $3.39 for a bowl noodle? Wow. Hope it’s good! Looks like Donbei is a style and tensoba is just a shortening of tempura soba. Let’s hit it!

This is a great little collection of South Korean varieties you can’t easily find here! Ottogi Cheese Ramyun and Spaghetti bowls – been wanting to try them for a while! The two above are Paldo Korea varieties – I think Rabokki and Jjajang. The Nongshim Shin Cup in the lower right is the South Korean version. Thank, Kristen! Soon as they’re made, some The Ramen Rater stickers will be coming your way!

This is it – the last of the nine Annie Chun’s samples that were sent for Meet The Manufacturer. It’s definitely been an interesting jaunt! Some I really liked quite a bit, some I didn’t like so much. What’s very evident here is that Annie Chun’s definitely has a wide range of flavors. The last one is Chinese Chicken.
Here’s the next to last of the Annie Chun’s varieties they were kind enough to send for Meet The Manufacturer. Spicy Chicken Ramen sounds awesome! Let’s check it out.
As we are starting to wind down the Annie Chun’s Meet The Manufacturer (there are only two left), we find the last Noodle Express I have – Spicy Szechuan. It mentions that the Szechuan sauce is made with gochujang, a Korean standard as far as spicy fare goes. Let’s check it out.
Here we go with some more Annie Chun’s product! This one’s Vietnamese Pho, a flavor I have enjoyed dining out and dining in. Let’s see how this version of Pho does!

Welcome to Show Your Noodles #21: The Momofuku Ando Day Edition! It’s been a couple of months since I’ve done a Show Your Noodles, mainly because I haven’t received any submissions. Well, recently people have been sending in quite a few and I thought today would be a good day to try it again. As always if you would like to participate in show Your Noodles #22, all you need to do is email a photo of anything you’ve made with instant noodles (a new recipe or a sculpture; really – go wild with it) with your first name, last initial, general location and a description of your noodles to hans@theramenrater.com. I reviewed the original version (non-microwavable) quite a while back and really liked it – it even made the Top Ten Instant Noodle Bowls list. Today I’m going to check out the new version.

Today is the last of the Sakurai Foods Meet The Manufacturer. I have enjoyed trying such a great range of products from Japan! We finish with the one that made this Meet The Manufacturer happen. I email lots of instant noodle manufacturers, trying to get Meet The Manufacturer interviews to happen. I hadn’t contacted Sakurai Foods before and gave it a shot. Here’s my re-review of their miso vegetarian flavor.

Here’s the second of the two Bowls that Sakurai Foods sent. From what I gather from their website, these are their newest products. The bowls are recycles sugar came fibers! Has an interesting feel to it. Let’s check out this second bowl, this time, soy sauce flavor!
Anotyher one from Sakurai Foods today. I had the regular Soy Sauce Flavor the other day and this one’s for the meat-conscious.
