Today, we’ve got a nice one from Taiwan’s Wu-Mu. This is a newer variety that uses wide gauge noodles for a soup – something I find really interesting and not done nearly enough. Although these noodles are absolutely excellent in a dry noodle (without broth) setting, I think in soup they really excel too. Let’s see how these end up!

Finished (click to enlarge). Added scallions, soft egg, fried garlic and thin sliced beef. The noodles are broad and have a nice backbone to them. They’re chewy but not overly so. ●The width of the noodle is perfect-proportioned. The middle of wavy noodles are thick, while the both sides are thin, that is why the sauce is more easily stuck in the noodle itself, creating different layers of the tastes!
●The only soup noodle of the whole series.
●The product is made in the authentic way of making Sichuan spicy beef flavored soup noodle, so that it gives off an unique fragrance.
●Top Sichuan pepper with watercress, laurel, star anise and fennel make the spicy soup which is rich and refreshing but not pungent at all.

The broth has a strong Sichuan pepper taste with a very tasty and complex beef flavor as well. Finished (click to enlarge). Added spring onion, sesame seeds and shichimi togarashi. The noodles were thick and had a little too much crumble for my liking. I remember when I was at the Taiwan International Food Expo 2017 and seeing the Wu-Mu booth. Two gentlemen were sitting and talking and I came over and introduced myself. They gave me a sample of this product and I haven’t had the chance to review it yet – which works perfect as it’s now being reviewed in a Meet The Manufacturer series./ Here’s what they have to say about this variety:

●Exclusively using the Matsu liquor which the factory has made for more than 60 years. The fragrance of the liquor is charming and rich.
●Utilizing the carefully selected fresh ingredients and traditional Chinese medicine such as angelica, ginger, wolfberry, garlic to mix a seasoning packet of medicinal foods flavor.
●Exceptionally fine ramen, which is made for copying the taste of hand-made vermicelli, in order to create a distinctive flavor.

Indeed, this sounds like a fancy variety and I’m very curious about it, that’s for sure! Let’s open up this package and investigate.

I really like this – I have so many binders full of noodle packaging and every once in a while, I will open one up and look through it. What’s interesting about food is that it has a way of entering your mind as well as your belly – a very strong sensory experience. Today I try a straight dry noodle in the Man Dashi (mian da shi) range . The name translates to ‘noodle master.’ Here’s a little info from Wu-Mu about this one –

Zhajiangmian (simplified Chinese炸酱面traditional Chinese炸醬麵; literally: “fried sauce noodles”), or “noodles with soybean paste”, is a Chinese dish consisting of thick wheat noodles topped with zhajiang sauce. Zhajiang sauce is normally made by simmering stir-fried ground pork or beef with salty fermented soybean paste.

In Beijing cuisineyellow soybean paste is used, while in Tianjin and other parts of China sweet bean saucehoisin sauce, or broad (fava) bean sauce may be used in place of the yellow soybean paste. Soy sauce can also be used instead of the soybean paste. Zhajiang also means “fried sauce” in Chinese. Although the sauce itself is made by stir-frying, this homonym does not carry over into the Classical Chinese term .

vegetarian version of zhajiang sauce may be made by substituting ground beef or pork with finely diced extra firm smoked tofu (熏豆腐干), edamame (毛豆), eggplant, or extra firm tofu (素鸡). In the Northeast China, using scrambled egg instead of meat to make zhajiang is also quite common, known as jidan jiang.

The vegetarian versions generally call for soybean paste of any sort instead of soy sauce, since the tofu chunks are larger and need more structure. Low-fat dieters often use ground, skinless chicken for the meat portion since ground turkey is not very popular in Asia, and a halal version is often made with ground beef or lamb.

The topping of the noodles usually are sliced fresh or/and pickled vegetables, including cucumber, radish, edamame, depending on regions. Chopped omelette or in lieu of extra firm tofu can also be alongside.
