A huge thanks to MLats for shooting this over! Love it when readers come through with varieties I’ve never gotten the chance to try and really want to.

So – a little background. Aji-no-men is produced by a company called Aji-no-moto. Here’s a little about the Japanese company from Wikipedia –

Ajinomoto Co., Inc. (味の素株式会社 Ajinomoto Kabushiki gaisha) is a Japanese food and biotechnology corporation which produces seasoningscooking oilsfrozen foodsbeverage,  sweetenersamino acids, and pharmaceuticals.

AJI-NO-MOTO (味の素, “essence of taste”) is the trade name for the company’s original monosodium glutamate (MSG) product.[2]

The origin of Ajinomoto Co., Inc. was a newly organized business unit in 1908 in Suzuki Pharmaceutical Co., Ltd., founded in May 1907 by Saburosuke Suzuki II. This unit was organized at a request of Dr. Kikunae Ikeda (1864–1936), a Professor at Tokyo Imperial University, who invented a method for producing monosodium glutamate seasoning. He wanted to commercialize his discovery and by working with Sabururosuke Suzuki II to make this a reality in 1909. Under the general control of Saburosuke, Chuji Suzuki, a younger brother of Saburosuke, was in charge of the production and Saburo Suzuki, a son of Saburosuke, handled sales and marketing.[37] Dr. Ikeda was interested in the taste of kelp juice and when analyzing samples, he discovered the causative substance of its unique flavour, was monosodium glutamate (MSG). He named this specific taste “umami.”. Umami is now accepted around the world as one of the essential basic tastes, but it was not yet known at the time of discovery.[38] Ikeda further invented a method of manufacturing MSG, and acquired patents in Japan in 1908, France in 1909, the UK in 1910, and in the United States in 1912.[39] After obtaining a Japanese patent, Ikeda was inspired by an article written by a Japanese doctor, Hide Miyake, claiming that the flavour of umami facilitated digestion. Subsequently, in order to use umami to improve the health of the Japanese at that time, he asked Saburosuke Suzuki II to further commercialize it for general consumption.[40][41] The product name “AJI-NO-MOTO,” which continues to be used today, represents a seasoning that is made from vegetable proteins such as wheat and soybean. In November 1908, the company registered its trademark for ““AJI-NO-MOTO””. In parallel, in October 1908, prior to the start of manufacturing and in consideration of safety issues, the company conducted an evaluation test of monosodium glutamate at the Tokyo Sanitation Laboratory of the Ministry of the Interior. Test results and evaluations showed that the product was harmless and suitable for human consumption. As a result, full-scale production began in December 1908 and products were mass-produced by March the following year. After presenting the product at an exhibition at the first new product exhibition event held in Ueno, Tokyo, in April 1909,[41] sales for general consumers began on May 20th 1909.[42] This is the founding anniversary of the business.[43]

So yeah – this is a very old Japanese company and they have lots of different product ranges. I’ve always wanted to try their instants, and here’s some from their Peruvian line! Let’s give it a try!

Finished (click to enlarge). Added Salad Cosmo mung bean sprouts, spring onion, black sesame seeds, barbeque pork, and habanero togarashi. The noodles were just perfect – four minutes and they’ve got a very premium chew and gauge. The broth has a strong miso flavor which is very rich. It seemed to center in red miso. The broth also has a slight pepperiness. 4.5 out of 5.0 stars.  JAN bar code 4901468910398.

First, the noodles have a little bit thicker a gauge than most instant varieties. Indeed they are premium although a slight bit softer than one might expect. The broth is a sea of rich pork flavor – different than many. As a matter of fact, this really REALLY has a nice pork flavor; most pork varieties don’t have a great pork taste as the pork taste they do have get overshadowed by saltiness. The vegetables hydrated well and the pork was very good. Original review

So the noodles are broad and flat with a light chew and an excellent quantity. The broth is a tour de force of beef taste. It has a good thickness/oiliness to it as well as a good flavor. Indeed as expected, there’s a decent punch of spiciness. Indeed, the chunks of beef are of good size and quality. Moreover, the liquid with the beef in the retort pouch add depth to the broth. Finally, little rings of chilli pepper are here and there, joining the party. Original review

TTL stands for Taiwan Tobacco & Liquor and indeed there’s a sachet of rice wine in here! Add to that a big retort pouch full of decent sized chunks of chicken, good noodles and garnish, This is definitely a bowl to seek out and try. Original review

A newcomer to the list, however a flavor I’ve known for a while. Samyang Ramen and Samyang Ramen Hot are just plain delicious; a thick and chewy noodle is coupled with a great spicy ham broth which is just sensational. It hit #2 this year on my Top Ten South Korean list. Original review

Okay so first off, this is a heavy bowl. There’s a huge retort pouch in here full of beef and beef tendon. The noodles are wide and have a great chew and the broth has a nice flavor. But the start of the show is that braised beef and tendon – it’s perfect and there’s just so much of it. Very impressive! Original review

Premium noodles in this one. Very chewy and with an excellent mouthfeel. The broth just bristles with a rich meatiness. Flavor is just wonderful – an asset to this high end Nissin Japan range. Original review

This is one where I’ve added nothing and just look at it! This one had very good noodles to start off. The broth was a very thick prawn infused decadent flavor spectacle. Then there’s the little crunchy topping and the other garnish they provide and this is just amazing stuff. Wow. Floored. Original review

Wow – I’m so freaking impressed with this one. First, there are two bowls. Peel back the lid of the first bowl and add boiling water. After a short time, you poke holes in the lid and drain the liquid into the second. A sachet of soup base is added and you have a soup with lots of corn and herbs. Next, a huge sachet with chicken and vegetables boasts a great spicy green curry flavor which mixes with the noodle. A really amazing product which is unique and delicious. This is Little Cook Thailand Green Curry Instant Noodle’s third year in the number one spot in a row – congratulations! Original review

The Cup Noodle Light+ series has really impressed me; amazing how much flavor you get out of a low-cal cup. The noodles have a really nice quality to them – not mushy or anything; they’re just really good. The broth is saucy and hearty with a cheese and light fish taste which is augmented with vegetables galore. This is on the top ten cups list and now on the top ten japanese list. Original review

I’ve always really loved yakisoba and this is the best I’ve found in an instant form yet. Otofuku is a brand of yakisoba sauce that can be found almost anywhere, and it’s inclusion in this one is just perfection. What’s more, the noodles are garnished with green laver (flaked seaweed) and a little mayonnaise packet! Original review

The noodles hydrated very well and have one seriously good chew to them. The broth is equally amazing – a purely elegant shoyu broth with a good oiliness and great flavor. Shio translates to salt, although shio ramen varieties aren’t simply water flavored with salt. Often they have a slightly lighter broth than many other styles of ramen with a very tasty finish. This one was particularly interesting as it has a great amount of inclusions and an excellent noodle, along with a savory broth. Original review

In the last year, I’ve decided to start doing videos for each on of my reviews and as of April 3rd, I’ve done 295 episodes. You can watch me cook and garnish everything as I sit at my stove. Big Changes For Me

Diet and exercise update

Some of you have been noticing I’ve been losing weight – thank you! In fact I’ve been working hard on that. Reviews I do are usually involving me eating maybe 5% of a bowl of noodles, if that. Everything else goes down the drain.

I keep my regime to around 1200~1500 calories a day. I’ve also been doing a lot of walking with my daughter Miriam. With her stroller decked out with lots of lights and a really loud speaker (I usually play a lot of Primus, Herbie Hancock and Tobacco), we walk all over town. My feet hurt, too! If you put together our walking from April 1st and April 2nd, it comes to 21.12 miles (33.989km)! No, that is NOT a typo. My doctor told me I had high cholesterol back in October and I decided to make some changes. As of April 26th, I’ve lost a total of 65 pounds and cholesterol is great, blood pressure is great!

The first Indomie variety on the list in years and it’s really amazing. Basically take their Mi Goreng Rendang and include a sachet of real rendang in a retort pouch. This comes after recently hearing that Indomie Rendang is hard to find here in the United States, something I was surprised to hear since it’s such a popular product and such a good one. I’ve become enamored and thrilled with the straight ramen noodle varieties in recent years – especially ones from Hong Kong which have been on the last two The Ramen Rater’s Top Ten Instant Noodles Of All Time lists. This is Sau Tao’s first appearance on the list. A Thai flavor is delivered masterfully – broth has a great richness and crispness of tom yum kung – spicy and lemongrass and shrimp notes play together very well. Original review

Another one returning to The Ramen Rater’s Top Ten Instant Noodles Of All Time list, Red Chef’s Green Tom Yum Soup Noodles feature a fried noodle with a great mouthfeel and quantity. They work well with the broth which is like a mashup of tom yum and green curry. The spiciness and flavors are just great – it might seem like a strange gimmicky kind of thing but definitely not. I love the new and this is a new flavor for the instant noodle world. Original review

#6: Prima Taste Singapore Curry Wholegrain La Mian – Singapore

Top Ten Best Instant Noodles Of All Time 2019

Since a very young age when my mother would cook curried chicken livers over rice, I’ve absolutely loved curry. This one is just mind blowing and has been on the top ten for years and years. The noodles are thick and chewy  – and have a rustic kind of feel to them. Marry that to the broth which comes from a large sachet of curry paste and one full of coconut milk powder, you end up with a rich, luxuriant experience you’ll love. I should note they also have a version with non-wholegrain noodles which is also very impressive. Original review

Back again with their rich curry noodle, CarJEN brings something very special to the table in their Nyonya Curry Laksa. You dip the paste seen on the spoon into the broth to flavor it and it has little bits of shrimp in there that really are a nice addition. Sweetness, spiciness, richness from coconut milk powder, and a nice plump noodle makes this so tasty and memorable. Original Review

This is the highest position a Taiwanese variety has achieved in The Ramen Rater’s Top Ten Instant Noodles Of All Time before – congratulations, Taiwan! For a long time, I’ve really enjoyed this style of noodle from Taiwan. It’s wide, with a center line which is thicker, and the sides are thinner – which gives them a very unique and wonderful mouthfeel. I’ve also always thought that these would just sing is in a broth (usually they are presented with a combination of sauces but no broth). The soup is rich with a strong beef flavor and hint of Sichuan peppercorn that do not overwhelm. The nice part is the inclusion of real beef in here. It should be noted that there is a special version of this that comes out during Lunar New Year which includes Wagyu beef – very expensive at a whopping $15USD per serving!, but very tasty as well. My wife Kit saw this while we were up in Canada and it piqued my curiosity so thought hey let’s give it a try. Noodles are very broad – over an inch. The flavoring is just superb – to use a word I normally don’t, this is yummy. What’s interesting too is that they included meat – at least I thought it was meat – it’s made from soy protein! Unique, delicious, and the highest a Chinese variety has achieved on The Ramen Rater’s Top Ten Instant Noodles Of All Time to date. Congratulations! Original review

Let the prawn-slaught begin! Returning to the #2 spot this year, we have a Red Chef variety that just gives and gives when it comes to sweet and savory prawn flavor. This umami bomb has a nice chewy noodle that is complimented by just the sweetest, strongest prawn broth with an excellent thickness and just the right amount of spiciness. What’s more they include a sachet of crispy onions to put on top that round things out so well. If you want to have a prawn freak out, this is an indispensable tool. Original review

For the fourth year in a row, Prima Taste wins with it’s excellent Wholegrain Laksa. If  abandoned on an island with only a life supply of instant noodles, I’d want them to be these, period. Hearty artisan noodles which are thick and of good quantity are combined with a broth which has a strong flavor and richness from coconut milk powder. A flavorful and striking noodle dish. Big Changes For Me

Some of you have been noticing I’ve been losing weight – thank you! In fact I’ve been working hard on that. Reviews I do are usually involving me eating maybe 5% of a bowl of noodles, if that. Everything else goes down the drain.

I keep my regime to around 1200~1500 calories a day. I’ve also been doing a lot of walking with my daughter Miriam. With her stroller decked out with lots of lights and a really loud speaker (I usually play a lot of Primus, Herbie Hancock, Sepultura, Deodato, and Tobacco), we walk all over town. My feet hurt, too! If you put together our walking from April 1st and April 2nd, it comes to 21.12 miles (33.989km)! No, that is NOT a typo. My doctor told me I had high cholesterol back in October and I decided to make some changes. I’ll find out how I’ve done later this month and let you guys know how I’ve done so far.

The first Indomie variety on the list in years and it’s really amazing. Basically take their Mi Goreng Rendang and include a sachet of real rendang in a retort pouch. This comes after recently hearing that Indomie Rendang is hard to find here in the United States, something I was surprised to hear since it’s such a popular product and such a good one. They work well with the broth which is like a mashup of tom yum and green curry. The spiciness and flavors are just great – it might seem like a strange gimmicky kind of thing but definitely not. I love the new and this is a new flavor for the instant noodle world. Original review

Since a very young age when my mother would cook curried chicken livers over rice, I’ve absolutely loved curry. This one is just mind blowing and has been on the top ten for years and years. The noodles are thick and chewy  – and have a rustic kind of feel to them. Marry that to the broth which comes from a large sachet of curry paste and one full of coconut milk powder, you end up with a rich, luxuriant experience you’ll love. I should note they also have a version with non-wholegrain noodles which is also very impressive. Original review

Back again with their rich curry noodle, CarJEN brings something very special to the table in their Nyonya Curry Laksa. You dip the paste seen on the spoon into the broth to flavor it and it has little bits of shrimp in there that really are a nice addition. Sweetness, spiciness, richness from coconut milk powder, and a nice plump noodle makes this so tasty and memorable. Original Review

The Ramen Rater’s Top Ten Additions To Instant Noodles 2013

I eat instant noodles. Every day. As of writing this list, I’ve reviewed 1,219 different varieties of instant noodles. Many people ask me if I get sick of instant noodles. Part of the reason I always say no is that I add things to my noodles to make them a more complete meal after I’ve reviewed them. I have seen quite a few lists online purporting to ‘hack’ or ‘pimp’ your ramen. Well, I’m not going to say that you will be able program it or hire it out, but it should be a bit more enjoyable and well-rounded. With that, here are my top ten favorite things to add to instant noodles for 2013.

#10 – Nuts & Seeds

Recently, I reviewed a variety made in Nepal that mentioned eating it crushed and raw. This reminded me of snack mixes from India which contain a variety of nuts and seeds and gave it a try. It actually was quite good! What’s more, I’ve found that almonds go well in soupy noodles, and crushed peanuts atop varieties that don’t have any broth.

#9: Peanut Butter

Have you ever gotten some noodles that are just too spicy? Want to add a little protein and heartiness to a thin broth? Peanut butter in small amounts can work really well for this. I’ve used it in South Korean ramyun to cool down the heat before and it works quite well. Just remember – start by stirring in a little at a time as it can overwhelm the other flavors if too much is used.

#8: Pickled Ginger

I found pickled ginger to be to my liking the first time I tried Japanese yakisoba at a restaurant, so I sought it out and found it at the store. It’s got a nice little added crunch to it and a sharp flavor that adds well to Indonesian mi goreng varieties, Thai varieties and of course Japanese yakisoba.

#7: Hot Peppers

Whereas peanut butter calms down heat, chili peppers just ratchet it up higher. I usually like to get Fresno chili peppers (often referred to as ‘red jalapenos). They have a decent heat and the flesh is reminiscent of red bell pepper. Other pepper are great too of course – jalapenos either fresh or canned are good, Thai Sun peppers, etc. I usually will get a few of them and slice thin and toss in the freezer.

#6: Hot Sauces

I started doing The Ramen Rater thing in 2002, but quit after 60 reviews. I embarked on a journey into the world of hot sauces which was quite enjoyable and started The Sauce Rater website, which alas is now no longer. I turned back to instant noodles in 2010 after over 250 sauce reviews and finding that most hot sauces were just vinegar, peppers and salt (basically it got boring). I decided to try making my own varieties and had some good luck. Some I found that were quite good you can find at the store or online would be Melinda’s Garlic Habanero Hot Sauce – has a heat from the two main ingredients that constantly goes back and forth between the two which is nice. One I use regularly is called Dua Belibis, a variety from Indonesia. It’s very hot but sweet as well. The one I use every day is called Ashanti Louisiana Hot Sauce – cheap and does the trick.

#5: Fish

Shrimp and crab are great to use, but I want to focus on fish cake. Fish cake is fish that’s been ground up, some things added and then cooked, so all you need to do is heat it up. In the above picture, you can see narutomaki on the left. Used primarily in Japanese cuisine, it has a nice look, sweetness and slightly rubbery texture which is vaguely like calamari. In the center is kamaboko. Kamaboko is used in Japanese and South Korean dishes a lot and has the same kind of chewiness, but less of the sweetness. Finally, I would recommend seeking out Busan fish cake. It comes in many different shapes and is a great compliment to South Korean jjampong. As a side note, I tried Bai Top Shell (sea snails) earlier this year in a cold noodle recipe that was really quite good.

#4: Vegetables

Vegetables are easy to source and easy to prep and toss in the freezer. Of all the veggies out there, I’m definitely partial to onions. Sweet onions can be prepped and frozen, then added to a bowl of noodles to add a little extra flavor. Green onions are a traditional addition to ramen and pair nicely. Herbs go well too – cilantro (coriander) and sweet basil can be a nice addition and provide authenticity.  You really can’t go wrong with vegetables, although potatoes rarely fit in.

#3: Meat

One thing almost all instant varieties are lacking is meat. It gives a boost of protein and other nutrients. I have a really great piece of advice I recommend to anyone who is going to be enjoying a nightly bowl of instant noodles. I go to a supermarket that specializes in South Korean foods. You can buy meats that have been prepped for Korean BBQ; they’re generally sliced thin as bacon. What’s great about this is that it’s cheap and easy to bag up and freeze – a $10 package of beef or pork makes 12-17 bags of meat. All you do it take it out to thaw and saute it up with some veggies and put with your noodles. By the way bacon goes well also.

#2: Cheese

Cheese is commonly used in South Korean ramyun, but it works extremely well melted into many other varieties. A creamy chicken broth can be achieved with a simple slice of processed cheese. Not only is cheddar good – Swiss actually works well too as does mozzarella – they get stringy and chewy and taste great.

#1: Eggs

I’ve been putting eggs with instant noodles as far back as I can remember. It turns out that the original instant noodle invented in 1958 has a dimple in the middle of it. What for? So you can crack and egg on top as it cooks! There’s nothing like egg at add some heartiness and warmth to a bowl of noodles. Fried noodles with runny yolks are excellent on Indonesian mi goreng for breakfast. Drop an egg in a simmering pot of South Korean ramyun in the last 30-45 seconds of cooking. Hard boiled goes well with Japanese ramen. Definitely my favorite.
