Commonly known as chuka soba (中華そば), this version uses shellfish broth (貝だし) instead of the traditional one, together with soy sauce! That makes for a very, very rich broth.’

It’s an interesting one today as this totally looks like a shoyu. Hmm. Let’s give it a try!

Finished (click to enlarge).  Added chashu, spring onion, mung bean sprouts, narutomaki, sesame seed, crushed red pepper, and chashu. Noodle was on the ho hum side of things. Broth honestly just seemed like a shoyu with a little different kind of thing going on. The provided chashu was like a slice of ham the size of a slice of pepperoni. Not bad. . 3.5 out of 5.0 stars.
