Onomichi is a small city of 136,000 in Hiroshima prefecture known for it’s ancient temples. It is a hilly city southwestern coast of Honshu island, the main island of Japan.

This Ajihei ramen is characterized by it’s soy sauce (shoyu) based broth cooked with fish to imbue a unique but light seafood flavor to round out the broth. Although noodles in the region typically are wide and flat, Ajihei ramen sticks with a more traditional thin-medium noodle thickness to not over power a lighter shoyu based broth.”

Detail of the packaging (click to enlarge). Contains fish (and almost certainly pork). To prepare, boil noodles on high heat for 30 seconds, then turn to medium heat and cook 1 minute. Combine soup base with 300ml boiling water. Drain noodles. Finally, add noodles and soup to bowl and enjoy!

The noodles are thin and quite nice – they’ve still got a backbone with a light kind of disposition at the same time which was nice. The broth is very rich and has a great oiliness to it. Thick stuff!

Finished (click to enlarge). Added Salad Cosmo mung bean sprouts, spring onion, chashu, kizami shoga, shichimi togarashi, sesame seeds, soft egg. Noodles are thin and very good – they only cook for a minute or so and just come out exquisitely. The broth is porky and hearty and smooth – just the nicest flavor you could want in a tonkotsu. A fine bowl of noodles. 5.0 out of 5.0 stars.  JAN bar code 4527760120008.

First time I think I’ve had fresh buckwheat in this form factor and it’s pretty decent. The broth was a pretty typical soy and bonito hit, however the balance of flavors worked better than any I’ve had before.. All in all alright. 4.0 out of 5.0 stars.  JAN bar code 4901726014134.

Here’s what they had to say about this one – ‘This mixes two kinds of miso – red miso and white miso – to make the soup savory. It also uses 2 typed of noodles which have different widths to reproduce the texture of chopped noodles of the ramen shop, Kurenai. There, you can choose the spiciness; Miso, Kurenai or Onikurenai. Kurenai is the middle spice level, so if you are not satisfied with tits spiciness, you should visit Kurenai in Tokyo to try Onikurenai.’

Added baked chicken (seasoned with black pepper, garlic powder, and Nutek Salt for Life), spring onion, barbeque pork, Salad Cosmo mung bean sprouts, and habanero togarashi. The noodles came out quite nicely with a good quality and large quantity. The flavor was on pint – tasty as can be and logical.
