Finished (click to enlarge). Added egg, spring onion, chili oil, and black sesame seeds. Noodles came out well – nice gauge and plumpness here. Broth was pretty good although I found the previous variety from Teishi was much better. Wine is a nice accompaniment, however previous version worked better. 3.5 out of 5.0 stars.  EAN bar code 4710969979366.

The broth has this elegantly rich character and great beef taste paired with the hua diao liquor. It goes so amazingly well. Pickled vegetable here and there goes well too. Happy to be revisiting this variety, It made The Ramen Rater’s Top Ten Instant Noodles Of All Time 2018 Edition list this year and with good reason: it’s really, really good. Here’s a little about carbonara from Wikipedia –

Carbonara (Italian: [karboˈnaːra]) is an Italian pasta dish from Rome[1][2] made with egg, hard cheeseguanciale (or pancetta), and pepper.

The recipe is not fixed by a specific type of hard cheese or pasta. The cheese is usually Pecorino Romano.[1] Spaghetti is the usual pasta, however, fettuccinerigatonilinguine, or bucatini are also used. Either guanciale or pancetta can be used. Another common substitute outside Italy is lardons of smoked bacon.

The dish was created in the middle of the 20th century.[3]

As with many recipes, the origins of the dish and its name are obscure.

The dish forms part of a family of dishes involving pasta with bacon, cheese, and pepper, such as spaghetti alla gricia. Indeed, it is very similar to the Italian pasta cacio e uova, dressed with melted lard and mixed eggs and cheese.[4]

There are many theories for the origin of the name, which may be more recent than the dish itself.[4] Since the name is derived from carbonaro (the Italian word for charcoal burner), some believe the dish was first made as a hearty meal for Italian charcoal workers.[1] In parts of the United States the etymology gave rise to the term “coal miner’s spaghetti”. It has even been suggested that it was created as a tribute to the Carbonari (“charcoalmen”), a secret society prominent in the early, repressed stages of Italian unification.[19] It seems more likely that it is an urban dish from Rome,[20] although it has nothing to do with the Roman restaurant of the same name.[21]

The name may also have derived from “Carbonada”, the word for bacon in central Italy’s dialect.[22]

Pasta alla carbonara is unrecorded before the Second World War; notably, it is absent from Ada Boni‘s 1930 La Cucina Romana. The dish is first attested in 1950, when it was described in the Italian newspaper La Stampa as a dish sought by the American officers after the allied liberation of Rome in 1944.[23] It was described as a Roman dish, when many Italians were eating eggs and bacon supplied by troops from the United States.[24] It was included in Elizabeth David‘s Italian Food, an English-language cookbook published in Great Britain in 1954.[25]

Add soup sachet to 200ml boiling water to make soup. Drain noodle after 3 minutes cooking and combine with retort pouch contents. Finally, stir and enjoy! Note – soup is not combined with noodles but served alongside as shown in image below.

A thick white sauce with pork.

Finished (click to enlarge). Added chashu pork, scallions and fried onion. Noodles come out right right for the sauce which is more than enough to hug every curve of them. The flavor is a rich and creamy one with elegant white wine notes. Included pork in the sauce goes extremely well. As for the sipping soup, it’s exceedingly good – like a cream of chicken.. It extols a very tasty beef flavor and the included beef is braised to perfection. Including the Hua Dian wine in this also was just the right move and it adds an extra layer of richness. I thought I ought to start at the beginning. I’m pretty sure this and the rice wine spring chicken varieties are the first that TTL shared with the world and it just made sense to go with those to begin Meet The Manufacturer. Here’s a little about Shaoxing wine, featured in this variety from Wikipedia –

Shaoxing wine (Shaohing, Shaoshing) is one of the most famous varieties of huangjiu, or traditional Chinese wines, fermented from rice. It originates from the region of Shaoxing, in the Zhejiang province of eastern China. It is widely used as both a beverage and a cooking wine in Chinese cuisine. It is internationally well known and renowned throughout mainland China, as well as in Taiwan and Southeast Asia.[1]

Today, we have a traditional Italian variety – from Taiwan? Yup – Italian noodles from Taiwan! Here’s what Wikipedia has to say about bolognese –

Bolognese sauce (UK/ˌbɒləˈnzˈnɛz/US/ˌblənˈjz/;[1] known in Italian as ragù alla bolognesepronounced [raˈɡu alla boloɲˈɲeːze; -eːse]ragù bolognese, or simply ragù) is a meat-based sauce originating from Bologna, Italy, hence the name. In Italian cuisine, it is customarily used to dress tagliatelle al ragù and to prepare lasagne alla bolognese. In the absence of tagliatelle, it can also be used with other broad, flat pasta shapes, such as pappardelle or fettuccine. Genuine ragù alla bolognese is a slowly cooked sauce, and its preparation involves several techniques, including sweatingsautéing and braising. Ingredients include a characteristic soffrittoof onion, celery and carrot, different types of minced or finely chopped beef, often alongside small amounts of fatty pork. White wine, milk, and a small amount of tomato concentrate or tomatoes are added, and the dish is then gently simmered at length to produce a thick sauce.

The earliest documented recipe of an Italian meat-based sauce (ragù) served with pasta comes from late 18th century Imola, near Bologna. A recipe for a meat sauce for pasta that is specifically described as being “bolognese” appeared in Pellegrino Artusi‘s cookbook of 1891. The ragù alla bolognese that is now traditionally associated with tagliatelle and lasagne is somewhat different from Artusi’s recipe. Many traditional variations currently exist. In 1982 the Italian Academy of Cuisine registered a recipe for authentic ragù alla bolognese with the Bologna Chamber of Commerce (incorporating some fresh pancetta and a little milk). In Italy, ragù alla bolognese is often referred to simply as ragù.

Outside Italy, the phrase “Bolognese sauce” often refers to a tomato-based sauce to which minced beef (or pork) has been added; such sauces typically bear less resemblance to ragù alla bolognese being more similar in fact to the ragù alla napoletana from the tomato-rich south of the country. Whereas in Italy ragù is not used with spaghetti,[2] so-called “spaghetti bolognese” has become a popular dish in many other parts of the world.

Finished (click to enlarge). Added parmesan cheese, habanero curry shichimi and scallion. The noodles hydrated nicely and have a soft tooth. The flavor from the retort pouch is quite nice – a zesty tomato sauce with little pieces of pork in there. The red wine works well here, but it’s overwhelming. The sipping soup wasn’t altogether to my liking; it reminded me of frozen pizza with its flavor. 4.0 out of 5.0 stars.  EAN bar code 4710199110904.

When I think of rice wine, my mind immediately goes to sake from Japan. I was surprised to find that there are many different kinds of rice wine – here’s a pretty extensive list from Wikipedia –

  • Apong – An Indian rice wine indigenous to the Mising tribe, from the Northeastern states of Assam and Arunachal Pradesh.
  • Ara – Bhutanese rice, millet, or maize wine
  • Brem – Balinese rice wine
  • Cheongju – a clear, refined rice wine from Korea
    • Beopju – a variety of cheongju
  • Cholai – A reddish rice wine from West Bengal, India
  • Choujiu – A milky glutinous rice wine popular in Xi’an, China
  • Dansul – a milky, sweet rice wine from Korea
  • Gwaha-ju – a fortified rice wine from Korea
  • Hariya – A white/watery rice wine from India.

Here’s detail of the lid (click to enlarge). Contains chicken. To prepare, add in all sachets but the retort pouch. Add boiling water to fill line and cover for 3 minutes. Use retort pouch to hold down lid. Add in retort pouch contents. Finally, stir and enjoy!

Finished (click to enlarge). Added Salad Cosmo mung bean sprouts, spring onion and Hachi habanero curry shichimi. The noodles hydrated exquisitely – not at all spongy which I thoroughly appreciated. I was really thrilled to get a huge box from Taiwan as always, but I wasn’t exactly sure what this box was at the outset. I really enjoy a surprise as well, so let’s watch as I crack this box open and look at some of the varieties for review in this Meet The Manufacturer series!

This was one variety I didn’t want to leave Taiwan without. I was lucky – we walked around the food expo in Taiwan last November and didn’t see it. Then We went through the beer, wine and spirits section and boom – there it is! A huge booth for TTL (Taiwan Tobacco & Liquor) and a guy asks is he could answer any questions. ‘Where are the noodles?’ Well, I showed him my event badge and he knew who I was which was very cool. Nice guy who went by the name of Ben – if you see this Ben, contact me – would love to do an interview about this product line!

I’ve reviewed the first two varieties – one was chicken with rice wine, the second chicken with Shaoxiang cooking wine. This one is one of two varieties that are new – one with white wine and the other being a bolognese with red wine. Awesome! Boozy noodles! Let’s hit it!

Here’s the back of the package (click to enlarge). Contains pork. To prepare, add noodles and powder sachet to 500ml boiling water and steep for 3 minutes. Drain, saving 200ml water. Add powder sachet contents to it and set aside. Add wine and retort pouch sachet contents to drained noodles. Finally, stir and enjoy the noodles and sip the soup!

Finished (click to enlarge). The noodles come out nice – just a perfect gauge and mouthfeel. They have a decent backbone to them which works well with the sauce. It’s a rich and creamy carbonara with pieces of meat and vegetables throughout – just wonderful stuff. Add to that a creamy soup alongside and you’ve got a really great combo here. 5.0 out of 5.0 stars. EAN bar code 4710199110850.
