Katsuobushi (鰹節) is simmered, smoked and fermented skipjack tuna It is also known as bonito flakes. It’s often used with a dashi broth, or as a topping to Okonomiyaki, Osaka’s famous savory pancakes.

Finished (click to enlarge). Added chashu, marinated egg, spring onion, Salad Cosmo Mung Bean Sprouts, sesame seed, and shichimi. Somen was light and thin. Well hydrated too.
