Meet The Manufacturer: #1356: Mamee Chef Spicy Chicken Shiitake Flavour

Here’s another one of the Mamee Chef line – spicy chicken shiitake. These are their premium line of products, designed in concert with celebrity Dato’ Chef Ismail. Let’s have a look!

The back of the package (click image to enlarge). Looks to be meat free but check for yourself. To prepare, cook noodle block in 400ml boiling water along with the contents of the garnish sachet for 3 minutes. Add in powder soup base sachet and stir. Enjoy!

Lots of greenery as well as nice chunks of shiitake and chilli pepper.

 

Finished (click image to enlarge). Added Fresno chilli pepper, shiitake mushroom and chicken sauteed with some AGV sweet chilli sauce. The noodles are really good with a nice firmness and chew. They’re definitely premium. The broth has a strong spicy component and good chicken and mushroom flavor. The veggies didn’t hide and they were good – the shiitake was nicely hydrated. 3.25 out of 5.0 stars.UPC bar code 9555022303246.

#1274: Wu-Mu Shiitake Flavor Spinach Ramen

I’ve just got to face it; I’ve got noodles coming out of my ears here! There’s a big bag of these Wu-Mu noodles next to my bed that I’ve been almost tripping over as of late. They don’t fit anywhere else and each one is a 4 pack! I thought today my son and I would try a couple varieties. I figured I’d give this one a shot. I’m definitely not a huge fan of mushrooms, but the spinach noodles sounded nice. Let’s have a look!

The back of the package (click image to enlarge). To prepare, boil 600ml water. Add noodle block and cook for 3 minutes. Remove from heat and add oil and dry sachet and stir.

I made the mistake of getting some of this on my fingers and then licking it off. Ugh!

Finished (click image to enlarge). The noodles have a very nice chew to them. Their gauge is good as well, and a nice flavor. They aren’t overwhelmingly spinach flavored in the least. The broth is light in flavor (the flavor of the liquid sachet was very much diluted which was good) and has enough oil to give it some heartiness. The vegetables are highlighted by goodly sized chunks of shiitake mushroom which are decent. I am surprised how much I like this one. 3.75 out of 5.0 stars. UPC bar code 4710175565438.

Experiment: Making Fancy Gourmet Ramen

Today I watched “Mind Of A Chef,” a PBS show (here’s a link so you can watch it – it’s amazing!) . It has David Chang, who is really great to listen to and watch cook – and ramen is something he definitely has a passion for. Feeling kindred in this respect, I decided to use some of the things I saw in the show to make myself some dinner. I had some leftover frozen Yamachan ramen noodles. I thought these would be a good start, then I used the following.

Base
Swanson 33% Less Sodium chicken broth
Dash Kikkoman light soy sauce
3 small shitake mushrooms (frozen, then boiled for 3 minutes and removed)
black pepper
1 tbsp butter
sweet onion
1 tbsp minced garlic
splash of hite (Korean beer)

Noodles
1 leftover pack from Meet The Manufacturer: Yamachan

Addons
panko and Spade L Ranch Chicken Rub coated chicken breast (baked)
removed shitake mushrooms that have set in a bath of soy sauce for 15 minutes
egg hard boiled for 8 minutes with broth

kizami shoga (pickled ginger)

The chicken was the easy part. I was really stoked to find the missin bag of panko I had stashed in the cupboard.


From what I knew and the little I had watched at that point of the show, I figured I was on a good track – hopefully.


The noodles – I know these are good…

The upshot: don’t do this. There is definitely too much of a good thing. While I like eggs and Dua Belibis and all these other things, there came a BIG problem. The shitake mushroom was violent salty. The egg idea was born from seeing Chang using this awesome low temp slow cooker for eggs and whatnot and my egg ended up mostly staying in the shell. The broth did turn out quite alright actually – liked that a lot. I think simmerring the shitake in it for a few minutes really gave it a nice flavor, although it would’ve made more sense to use a pork broth like in the video. The chicken was awesome – some of the best chicken I think I’ve made – juice, tender and tasty with the panko and seasoning. The noodles also were exceedingly good. I think this was a case of logic that doesn’t work. Say you have two cell phones. The same charger will work for both, right? No, not likely. This was a bowl of incorrect dongles. I think I’ll leave this to Mr. Chang for now – maybe with a little more research I’ll give it another try. Glad I was the only one who was eating!I should say though this was a lot of fun and I did learn something – boiling shitake mushrooms in a broth really makes the broth taste interesting…

#922: Sunlee Shitake Mushroom Instant Vermicelli

Here’s one we got during our summer vacation. Found it at the Uwajimaya in Beaverton, Oregon. Mushrooms… Well, Let’s give it a go!

This is kind of interesting; I’ve seen many many dual packets like this, but never one that is horizontally labeled.

Finished (click to enlarge). The noodles are pretty good; they’re bean vermicelli. The broth is spicy with a strong chili powder taste and very mushroomy. The bits of mushroom are spongy. This was not my cup of tea. 1.25 out of 5.0 stars. If you love mushrooms in all forms, this might be for you, but as for myself, this is really funky. UPC bar code 761934016481 – get it here.

#558: Long Kow’s Crystal Noodle Soup Vegetables ( and Eggs )

Thought this looked worth trying. Vegetables and noodles. Sure why not.

Here’s the flavoring packet if you want to call it that. It says Vegetables and Eggs though… I am truly unhappy – I didn’t take a picture of this and I’m really bummed and truly sorry. It looked like a brick of freeze-dried vegetable omelet. When I poured boiling water on it, it disintegrated and started fluffing up almost immediately.

Click image to enlarge. Yeah… There it is. Well, it wasn’t what I’d hoped for. What did I hope for? A good bowl of noodles. I was skeptical when I saw they were bean thread. The large amount of mushroom and cabbage and odd hydrated egg was amazing. I think if this were spicy and they’d used fried noodles that I would have liked it much better. Long story short, I’m not pleased. 1.5 out of 5.0 stars. Find it here.
