Recently, I was given the great opportunity to visit the Wheat Marketing Center in Portland, Oregon. People who work with noodles and other wheat products from all over the world come here to take part in the Asian Noodle Technology and Ingredient Application Short Course. The course is taught by Dr. Gary Hou, an expert in the production of wheat noodles like ramen and yakisoba. I found out about the course via a news feed I follow and decided to email Dr. Hou and see if I could cover the instant noodle workshop for The Ramen Rater. I was very pleased when he answered in the affirmative, and so on March 27th, we got up early, hopped in the car and drove to Portland! In the following pictures and video, I’ll describe how instant noodles start as raw ingredients and become the blocks of noodles we all know so well. I’ll go through everything from photos first, and then there’s a video at the bottom of the process. Enjoy!
I read an article about the dangers of instant noodle cups a long time ago which prompted me to write an article last year. Well, I recently saw another one so I thought it was time for a rebuttal. My wife was under the weather last month and I thought I’d make her something special. She liked some Saimin I made recently and she really likes udon. Another of her favorites is cheese. Well, I decided to bring all of that together and make cheesy udon with SPAM in it. Here for you is the method to the madness.

Right now, I’m at number 996 and going to pause. I will start reviewing again on Sunday, March 10th 2013. Why? Well, I figured I’d give myself a birthday present. #997 on Sunday, #998 on Monday and #999 will be on Tuesday. #1,000 will be reviewed and videotaped on Wednesday and posted on Thursday, which is my birthday!

Scott A. over at Nissin Foods USA sent a couple new items – Habanero Lime Chicken and Habanero Lime Shrimp Big Cup Noodles, Spicy Teiryaki Beef Chow Mein and a couple from Japan – another Nissin Raoh (this time miso) and the pack version of the Nissin Raoh Rich Soy Sauce & Backfat! Awesome! Thank you very much!

Wow how awesome! If you’re keen on South Korean noodles, you’ll probably recognize that this is the pack version of Paldo’s Dosirac tray. Paldo sells a lot of these in Russia.

I saw a lot of posts lately about the fantastic new ‘Anti Loneliness Ramen Bowl’ lately – a product designed by Miso Soup Design. I thought people would really like to know more about it – straight from the source. I was fortunate to be able to contact the makers of this neat new product and did an interview via email. In the future, I’ll be receiving a sample and put it through its paces with a video review! For now, here’s the interview:

This is a great little collection of South Korean varieties you can’t easily find here! Ottogi Cheese Ramyun and Spaghetti bowls – been wanting to try them for a while! The two above are Paldo Korea varieties – I think Rabokki and Jjajang. The Nongshim Shin Cup in the lower right is the South Korean version. Thank, Kristen! Welcome to Show Your Noodles #21: The Momofuku Ando Day Edition! It’s been a couple of months since I’ve done a Show Your Noodles, mainly because I haven’t received any submissions. Well, recently people have been sending in quite a few and I thought today would be a good day to try it again. As always if you would like to participate in show Your Noodles #22, all you need to do is email a photo of anything you’ve made with instant noodles (a new recipe or a sculpture; really – go wild with it) with your first name, last initial, general location and a description of your noodles to hans@theramenrater.com. Don’t forget to check out the Momofuku Ando Day 2013 post – worked hard on that one! With that, let’s check out some noodles! My wife judges them – here we go!

Got an email telling me a package had arrived last week. It was from Scott A. over at Nissin Foods USA! Wonder what is inside…
First, I’d like to say that tomorrow, a new Meet The Manufacturer will kick off! Sakurai Foods of Japan has been kind enough to send samples and do a quick little interview! It promises to be quite interesting!
A reader named Don D. decided to share some wisdom about fish sauce. I’ve really never used it or known much about it. This was a really good read and I thought it deserved sharing with everyone!

I saw something about a Thai chili sauce mentioned on my favorite hot sauce group on facebook recently. It got me wondering if it would be something that could be an alternative to the standard big bottle of Sriracha that I usually go for. I tracked down the company and asked if they could possibly send a sample – a few days later, it arrived!

I got a package!!! The guy who arranged the donation of the Mr. Noodles from Canada (Mark K.) arranged a donation from someone he knows in Australia! Melanie I. sent this box from Jannali, NSW!

A little while back, a couple named Joe & Gill from the UK sent me some pictures for the ‘Show Your Noodles’ competition. They also offered to send some noodles from across the pond! After a little while, here they are!

A couple of weeks ago I was looking for articles to add to The Ramen Rater Noodle News and found an article with a YouTube video attached. Apparently, a recent college graduate had made something that involves cooking instant noodles and it would start selling at Walmart. I thought I’d see if I could contact the guy and get a sample of the product to review. Well, he sent a couple and here we go! Chris Johnson is the inventor of the Rapid Ramen Cooker. It promises speedy delivery of your instant noodles via the microwave! Before the review, here’s an interview I did with him recently via email.

This is a new product I found out about from a news story (link). I thought ‘wow this is awesome!’ After looking, I found the guy who invented and is marketing the product, Chris Johnson. He graciously offered to send samples and do an interview! Well, here are the samples and I will be trying them out with a few brands and doing an interview pretty soon. Thanks for these, Chris! Just a note – there’s a new number one on the Top Ten Spiciest Noodles Of All Time List! It’s South Korea’s emart with Dare You! Habanero Ramen!!! Man, it sure was hot! Go have a look here!

Ok so what is this madness I speak of? Well, in Indonesia, there’s Mi Goreng which are fried noodles. I thought since my last recipe got a write up today in Fox News Magazine ( link), maybe I should get a pack and experiment. I thought since Indonesian instant noodles are my all time faves and I really really enjoy Korean ramyun, why not try a mash-up?

I got a couple packages today. They came from a company in Korea called emart (이마트) – they sell everything you could imagine, and have their own brand of instant noodles!
