Here’s what they had to say about this one – ‘Hakodate City in Northern Japan is known for its light and lively salt-seasoned ramen. While it’s on the lighter side, the shio (salt) seasoning packs a punch. Pork back fat (seabura) gives it a silky richness and there are fish flavors in the background. Among toppings, the fluffy wheat gluten (fu) leaves a fun impression. This topping is only found in Hakodate shio ramen!’

Rad – let’s check it out!

Finished (click to enlarge). Added homemade chashu, sesame seed, spring onion, Salad Cosmo mung bean sprouts, marinated egg, and shichimi. Noodles are very good – strong tooth. The broth is hearty with a nice richness to it. Included chashu was decent and the ‘fu’ was a nice add – like a little piece of bread. 5.0 out of 5.0 stars.
