I wanted to get something next morning on Amazon and I needed to get $25 of stuff. This was a quick fix for that – not very expensive and I’ve not tried it in years. Asian Pantry via Gemini had this to say about this style – ‘Nagahama yatai ramen is a style of Fukuoka street food (yatai) featuring thin, fast-cooking noodles in a rich, cloudy pork bone (tonkotsu) broth, originating in the 1950s for fish market workers. Known for being quick, cheap, and creamy, it pioneered the kaedama (noodle refill) system. It is often sold as a “mild” instant, sometimes vegetarian, ‘ Let’s give it a whirl!

Detail of the packaging (click to enlarge). Looks to be meat free but check for yourself. To prepare, boil noodle 2~5 minutes. Add in a sachet of soup base. Finally, stir and enjoy!

Finished (click to enlarge). Added egg, chashu, narutomaki, scallion, sesame seed, and chili crisp. Noodle has a nice gauge and chew. The instructions mentioned 2~5 minutes; I did 4 and I think next time I would do 5. Broth is a salty and nice tonkotsu taste with bits of what I surmise is chive here and there.
