I did a ton of walking this week – about 30 miles and I am thinking this will be a nice reward. Aka tonkotsu has a vibrant orange red broth and some heat – had it before and it’s a beautiful thing. I think this is a great one for today.

From what I see it’s giant mustard green and has a peppery flavor. That sounds good – especially in tonkotsu. Let’s give it a go.
