#2510: MyKuali Penang Red Tom Yum Goong Noodle

#2510: MyKuali Penang Red Tom Yum Goong Noodle - Singapore - Malaysia - The Ramen Rater - instant noodle

Today, we have the Singaporean version of MyKuali’s Tom Yum Goong. For those of you who haven’t had tom yum, here’s a little from Wikipedia –

Tom yum or tom yam (UK pronunciation: /ˌtɒm ˈjæm/ or /ˌtɒm ˈjʌm/; US pronunciation: /ˌtɑːm ˈjɑːm/;[2] Thai: ต้มยำ, rtgstom yam, pronounced [tôm jām]) is a type of hot and sour Thai soup,[2] usually cooked with shrimp.[3] Tom yum is widely served in neighbouring countries such as Cambodia, Brunei, Malaysia, Singapore and Laos and has been popularised around the world.

The words “tom yam” are derived from two Thai words. Tom refers to the boiling process, while yam refers to a Thai spicy and sour salad. Indeed, tom yum is characterised by its distinct hot and sour flavours, with fragrant spices and herbs generously used in the broth. The basic broth is made of stock and fresh ingredients such as lemongrass, kaffir lime leaves, galangal, lime juice, fish sauce, and crushed chili peppers.

Commercial tom yum paste is made by crushing all the herb ingredients and stir frying in oil. Seasoning and other preservative ingredients are then added. The paste is bottled or packaged and sold around the world. Tom yum flavored with the paste may have different characteristics from that made with fresh herb ingredients. The soup often includes meats such as chicken, beef, pork, or shrimp.

Alright – let’s give this award winning variety a try!

#1981: MyKuali Penang Red Tom Yum Goong Noodle Authentic Taste

Here’sd another of MyKuali’s new recipe ‘Authentic Taste’ range. I’m told this has more of the lemongrass and kaffir lime leaves, as well as mushroom and chicken broth. Most of ytou should know it was #1 on the 2015 Top Ten list. Let’s see how these changes affect the taste!

Here’s the back of the package (click to enlarge). Contains crustaceans and chicken (ingredients list hasn’t been upated – new packaging will reflect this). To prepare, cook noodles in 380ml boiling water for 3 minutes. Add in sachet contents. Stir and enjoy!

The noodle block.

A dry soup base sachet.

A light powder.

The paste sachet.

Definitely can detect the mushroom in the scent.

Finished (click to enlarge). Added Salad Cosmo mung bean sprouts, coriander and prawns. The noodles have that nice gauge and chew I’ve come to expect from MyKuali varieties. Good quantity as well. The broth has a nice spiciness and strong notes of lemongrass, lime leaf and the mushroom taste comes through as well. Excellent tom yum goong! 5.0 out of 5.0 stars.  EAN bar code 9555655005227.

#1602: Vina Acecook Mikochi Tom Yum Flavour Instant Noodles

Here’s something new from Vina Acecook – Mikochi. Never seen Mikochi before, but I thought it sounded interesting. These are non-fried noodles, so they’re lower in fat. I’m a big fan of tom yum flavored anything, so I’m hoping it’s a good pick. Let’s check out Vina Acecook Mikochi!

The back of the package (click image to enlarge). Contains fish and shrimp. To prepare, put noodle block and powder sachet contents in a bowl. Add 400ml boiling water and let steep for 3 minutes covered. Add in contents of oil sachet and stir well. Enjoy!

The noodle block. Usually you don’t steep non-fried noodles, so this should prove interesting.

The powder base.

Has a seafood scent and a coarse nature.

The oil sachet.

Has a kind of spicy and acidic scent.

Finished (click image to enlarge). Added fishball, coriander, sweet onion and mung bean sprouts. The noodles are interesting. They didn’t seem fully hydrated after the 3 minutes, but then I stirred them and added the oil and they were just right. The have a very different consistency; a little bit of a robbery mouthfeel and hard to break by pursing the lips. The broth is pretty good – has the spicy and lemongrass flavors consistent with tom yum, although just ever so slightly lesser so than many. The oil was a very welcome addition and added a nice color and oiliness to the broth. Small bits of hydrated vegetable float around here and there. 3.5 out of 5.0 stars. EAN bar code 8934563706166.

I remember liking these a lot – also by Vina Acecook – Hao Hao Mi Tom Chua Cay (Hot Sour Shrimp Flavor Noodle)

#384: Nissin Demae Iccho Instant Macaroni In Soup Tom Yam Goong Flavour

So I’ve been doing these slowly because they’re so cool! Another my sis brought back from Canada. Tom Yam eh? Should be interesting!

Two packets – seasoned stuff on the left and powder on the right.

Powder and paste!

Click image to enlarge. The finished product. It was a trip! As an American, I’m used to one thing with macaroni. Cheese. Or some glue and sticking it to a board and presenting it as art. This stuff is great – it was a little spicy, a light bit seafoody and very citrussy! I found it to be quite good. 4.0 out of 5.0 stars!
