Very good interview.
What many fail to realize is that when your rating noodles, it is based on your opinion and your tastes. If people don’t like that, well that’s their opinion. It is as you said in the interview; “it’s for your tastes.”
I wouldn’t let the nay Sayers get you worked up or worried though. To each their own.
