I got a big FedEx box yesterday with these and another variety from Vida Food Group and couldn’t wait to give them a try. This one is Menudo – let’s ask Wikipedia about it –

In Mexican cuisine, Menudo, also known as pancita ([little] gut or [little] stomach) or mole de panza (“stomach sauce”), is a traditional Mexican soup, made with cow’s stomach (tripe) in broth with a red chili pepper base. Hominy, lime, onions, and oregano are used to season the broth.

Menudo is traditionally prepared by the entire family, and often serves as an occasion for social interactions such as after wedding receptions where the families of the groom and bride go to either family’s house to enjoy a bowl of menudo before and after the ceremony. It is also believed to be a hangover cure.[1]

Menudo takes a long time to prepare as the tripe takes hours to cook. It includes many ingredients and side dishes (such as salsa), and is garnished with chopped onions, chiles, cilantro, and often with lime juice; it is often prepared communally and eaten at a feast. Documents from the American Works Progress Administration indicate that in the 1930s, among migrant workers in Arizona, menudo parties were held regularly to celebrate births, Christmas, and other occasions.[2]

I think I’ve had Menudo from a can before and of course, growing up I’d see the group Menudo on Saturday mornings during my regularly scheduled cartoon time. Let’s give this a try!

Detail of the side panels (click to enlarge). Looks to be meat free but check for yourself. To prepare, add in sachet contents and 2 cups boiling water. Cover for 3 minutes. Finally, stir and enjoy!

A dry sachet of vegetables.

Finished (click to enlarge). Added sauteed beef, lime, serrano pepper, basil, white onion, and cilantro. Noodle are nice gauge and chewy textured. The broth has a strong cumin hit and a rich flavor. Works well. 5.0 out of 5.0 stars.  UPC bar code 860003789505.
