A fine powder.

Finished (click to enlarge). Added grilled chicken, cheese, soft egg, baked flour tortilla, green onion, cilantro, crispy fried onion, and Cholula hot sauce. The noodles came out nicely and work well. Broth has a nice roast chicken flavor to it which I enjoyed, however the lack of vegetable makes it really just a chicken instant noodle; any semblance of taco flavor that was there before is completely gone. 2.0 out of 5.0 stars. Finished (click to enlarge). Added shrimp, barbecued pork, spring onion, chili flake, hot sauce, fried garlic, and fried onion. The noodles were disappointing to be honest – they ended up with a kind of sponginess I didn’t like and just didn’t work. Broth flavor was overwhelmed by the vegetable sachet which was mostly herb. It just seemed to be thrown together quickly and not of the quality I’m used to from this brand. 1.25 out of 5.0 stars.  UPC bar code 757170500204.

Finished (click to enlarge). Added spring onion, grilled chicken, Cholula hot sauce and black sesame seeds. Noodles have a round shape and after 4 minutes we reasonably hydrated. They didn’t seem to work with the broth as well as I’d hoped. Broth has a chicken and smoky taste to it which was unique and interesting. This last year, I’ve gotten to try hundreds of new instant noodles. Well, this one has a difference that is unique among thousands. First, it’s a chicken instant noodle which isn’t strange – however, this one is made for the United States and has a vegetable sachet as well. For the economy category, this is pretty awesome and unseen here. Second, it’s the first instant noodle I’ve ever seen with a sachet that has drink mix in it in an American instant noodle – let aloned one anywhere in the world. Lemonade, fruit punch – and it’s not bad! Definitely, find this! Original review

Today, we bid a fond farewell to Mama Pat’s Foods as the Meet The Manufacturer will be ending. Chef Ron informed me though that there will be cups and new flavors coming, so we’ll just say until next time. So chicken fajitas – here’ Wikipedia on the fajita:

A fajita (/fəˈhtə/; Spanish: [faˈxita]) is a term found in Tex-Mex cuisine,[2] commonly referring to any grilled meat usually served as a taco on a flour or corn tortilla. Finished (click to enlarge). Added red bell pepper, baked chicken, cilantro and shredded colby jack cheese. As with the other varieties, the noodles came up nicely with a good texture and soft chew. The broth was interesting; it had a nice tanginess to it I really didn’t expect and was very good. It was a lightly spicy kind of tangy chicken. The vegetables did very well hydrating and it all  comes together well! 3.75 out of 5.0 stars.  UPC bar code 728028430950.

Today, it’s lamb stew! So I really never have had lamb stew, nor really cooked lamb very often. I thought though I ought to at least make an attempt, and so today I’m going to sous vide up some lamb to go along with the noodles. But as for stew, let’s see what wikipedia has to say:

A stew is a combination of solid foodingredients that have been cooked in liquid and served in the resultant gravy. Ingredients in a stew can include any combination of vegetables (such as carrots, potatoes, onions, beans, peppers and tomatoes) or meat, especially tougher meats suitable for slow-cooking, such as beef. Poultry, sausages, and seafood are also used. While water can be used as the stew-cooking liquid, wine, stock, and beer are also common. Seasoning and flavourings may also be added. Stews are typically cooked at a relatively low temperature (simmered, not boiled), allowing flavors to mingle.

Added a lamb chop I cooked with a sous vide immersion cooker with crushed garlic, rosemary, thyme, salt and pepper at 140 degrees for 2 hours, thin carrot, sweet onion and black pepper. The noodles yet again hydrated very well. Indeed, the quantity is great and they have a soft tooth. The broth was a slightly peppery, savory one. Reminded me of the flavor of a something that stewed in a crockpot, yet with a light thin texture. 3.75 out of 5.0 stars. UPC bar code 728028430943.

One of the first things I learned about Mama Pat’s foods was when I saw a video of Chef Ron making gumbo at a store demo. He used big bags of shrimp, tons of crab and other really great ingredients. He didn’t hold back and definitely went for the gusto. I’m a fan of seafood but haven’t had a lot of seafood from the USA as of late since it’s usually found slathered in white sauces or copious amounts of butter. I definitely got spoiled in Malaysia and Thailand trying all that seafood from there – amazing stuff! Gumbo however is something different. It’s full of seafood and has a nice strong taste  – something I really like. I have high hopes for this one; it sounds good, but will it be? Let’s give this seafood gumbo a look!

The flavor was good, although it didn’t make me think of seafood gumbo exactly. Nonetheless, the herbs gave it a good taste I enjoyed. 3.5 out of 5.0 stars. UPC bar code 728028430936.

Finished (click to enlarge). Added jalapeno slices, sour cream, colby jack cheese, Cholula Chilli Garlic hot sauce, green onion and baked chicken. The noodles hydrated well and had a nice quantity and standard chew. The broth is thin but has a good chicken flavor. What makes this one a very nice domestic chicken style is the included vegetables – onion and bell pepper definite highlights. I found that it enhanced things very nicely. Definitely my favorite domestic chicken flavor thus far. 3.75 out of 5.0 stars. UPC bar code 728028430929.

So we had to go out and it was going to arrive most likely while we were gone. What I do in this case is put a sign on the door and tell couriers to leave them at the apartment complex’s office. Well, I got notification that it was left at the doorstep. When we got home, it was sitting right there – and the sign was removed! Dirty pool, FedEx! Crummy too when a company sends products overnight – you’d think they’d realize that the package should be dealt with with a little more respect. Luckily, it was right where they’d left it and everything was in good condition. So there’s my rant about packages! Let’s crack it open and see what’s inside!

Here we have the treasure (click to enlarge). There are four different Mama Pat’s Foods instant ramen noodles varieties: Seafood Gumbo, Chicken Taco, Chicken Fajita and Lamb Stew. Indeed, I have never reviewed any flavors like these to be honest. They’re all very unique and fascinating – definitely something new to check out. What’s more, they come with a drink you mix up! This is an interesting thing to see – I’m curious how this will hit the noodle industry – definitely an easy to include innovation, that’s for sure.  This is awesome – thanks to Chef Ron for getting these to me so quickly! Every once in a while, I get a phone call from a company interested in having me review their noodles. I got one recently from a fellow named Chef Ron from Mama Pat’s Foods. He told me about a product line tailor-made for the correction industry and how it was going to take over. I thought this was very interesting and definitely worth a look! I conducted this interview with Chef Ronald Freeman II, CEO of Mama Pat’s Foods USA / President Mama Pat’s Foods International to learn a bit more about the company and it’s aims.

tTHE RAMEN RATER> Thank you for taking part in Meet The Manufacturer! To start the interview, can you tell me about the history and founding of Mama Pat’s?

MAMA PAT’S FOODS> In 2013 we opened a restaurant in Inglewood CA serving Louisiana Style cuisine. We was very successful but Chef Ron CEO had a larger vision and started eyeing retail

TRR> What was the first product you manufactured?

MAMA PAT’S FOODS> We manufactured a frozen Seafood Gumbo Bowl

TRR> Your headquarters are located in Benin. What is life like there?

MAMA PAT’S FOODS> We opened that office only for export we are actually based in Los Angeles CA and life here is wonderful

TRR> Can you tell us about the different varieties of noodles you make?

MAMA PAT’S FOODS> We have 12 varieties but the ones we launched first are:
Seafood Gumbo Ramen
Chicken Taco
Chicken Fajita
Lamb Stew

TRR> How many noodle products do you produce every year?

MAMA PAT’S FOODS> I have licensed our Dist to sell a minimum of 40 containers per month. That’s 7 million packs per year to start!

TRR> Do you make varieties suitable for Vegetarians? Vegans?

MAMA PAT’S FOODS> Yes we have those completed formulas and will offer them soon.

TRR> Why the name Mama Pat’s?

MAMA PAT’S FOODS> It’s my grandmother’s name and she’s my inspiration in cooking. She always used the best ingredients and cooked from her heart.
Till this day even in my noodles I stay with these standards.

TRR> The varieties in your line are very different – what was the impetus for bringing these flavors to market?
MAMA PAT’S FOODS> I say that EVERY noodle brand does the exact same thing. Focus on ONE flavor. At MP we focus on a entire recipe! We do flavor ” blends” that give you more for your money. I also added “recipe” vegetables in our packs so it’s more flavorful and is a culinary match to the recipe and the flavor we have on our packaging. This took 3 years to master.

TRR> What kinds of noodles are used in your products? What are the differences between them?

MAMA PAT’S FOODS> We wanted a more REAL so searched many manufactures and sampled hundreds of brands. I didn’t want the horrible low quality you find in Top Ramen (Nissan) that are gummy,starchy,and over cook. I found a Chinese company that make a Tsukemen Japanese style noodle that’s light,and flavorful .

TRR> You include juice with your noodles – can you talk a little about that?

MAMA PAT’S FOODS> I wanted to give my customers a gift from us thanking them for there purchase, I teamed up with them Wylers light people and we wanted to offer a sugar free but a nutritional drink product that only takes 1 gram to produce a 16 oz drink that Is loaded with flavor.

TRR> How does your noodle making process differ from other instant noodle manufacturers?

MAMA PAT’S FOODS> We use more of the whole wheat grain in our noodles some 80% this produces a high quality noodle that has 50% less starch. It’s very close to Italian pasta like spaghetti, but has the appearance of ramen.

TRR> A lot of people are concerned with their sodium intake. How would you recommend people enjoy your product and do you take this into consideration during production/R&D?

MAMA PAT’S FOODS> We lower the sodium by 40% I cannot go into detail but I can say this, we are using less salt and replace it with real vegetable flavors that are custom blends and are patented by our company and can never be duplicated by the mega brands I compete with.

TRR> Are you involved in in your local community or participate in charities?

MAMA PAT’S FOODS> My goal is to market this into the prisons and jails across the U.S. to inspire the youth and incarcerated that they can start and own a legal business just like I did.

TRR> Are there any new products coming soon?

MAMA PAT’S FOODS> Yes! We want to do a Oat Based noodle and a Noodle Snack that’s high in fiber and is very close to granola with real fruit and nuts!

TRR> In what countries are your products popular? Do people enjoy them differently in different places?

MAMA PAT’S FOODS> We are in Africa and it’s doing very well, we are headed next to India and Mexico.

TRR> When you make noodles for yourself, what do you like to add to them to make them extra special (garnish, etc)?

MAMA PAT’S FOODS> Oh for me gumbo noodles I do this

We plan to open Ramen Grills all over the US to serve “custom Ramen Bar” there you can add whatever you want from our “bar” from seafood to fish to beef !! It’s your bowl do it your way!!
