Meet The Manufacturer: Interview With Moon Moon Food
THE RAMEN RATER> Thank you for agreeing to this interview! To start, can you tell my readers about the history of Moon Moon Food?
MOON MOON FOOD> Moon Moon Food began with the simple yet heartfelt idea of cooking for family with care. Every detail of our meals is filled with love and warmth — simple, abundant, and trustworthy. What started as a local restaurant serving comforting Taiwanese soups has now grown into a brand known for high-quality meals and dry noodles, sharing the culture of Taiwan — the culture of home — with the world.
TRR> What was the first product you made?
MOON MOON FOOD> Our very first dishes were traditional Taiwanese soups, especially the Clam Stewed Chicken Leg Soup, which quickly became a signature item loved by our guests. As we grew, we expanded into other comfort foods like oil rice and braised snacks, always staying true to our mission of providing warm, high-quality, and nutritious meals for every stage of family life.
TRR> Your company is located in Taiwan. Can you tell us a little about your country?
MOON MOON FOOD> Taiwan is a beautiful island rich in culture, hospitality, and diverse cuisine. Known for its vibrant night markets and incredible food culture, Taiwan is also a place where local ingredients are treasured. At Moon Moon Food, we take pride in selecting the finest Taiwanese ingredients — from clams and chicken to sesame and rice — to share authentic flavors with our guests.
TRR> Can you tell us about the varieties of noodles you make?
MOON MOON FOOD> Our noodles reflect both tradition and innovation. Two of our most beloved products are:
Spicy Sesame Dry Noodles: A perfect balance of numbing Sichuan peppercorn and rich sesame aroma, bold yet not overwhelming, finished with a lingering fragrance.
Black Truffle Dry Noodles: A luxurious twist with the earthy depth of truffle, paired with the chewy texture of our noodles.
TRR> How many noodle products do you produce every year?
MOON MOON FOOD> Currently, our focus is on a select range of noodles that represent the essence of our brand. While we do not mass-produce a large variety, we emphasize quality and continuous innovation. Each year, we refine and improve our existing products while developing new flavors inspired by Taiwanese cuisine.
TRR> How does your noodle making process differ from other instant noodle manufacturers?
MOON MOON FOOD> Unlike many instant noodles that rely on deep-frying during production, our noodles are sun-dried (air-dried under natural sunlight). This traditional method preserves the natural flavor and texture of the noodles while avoiding excess oil. It results in a healthier product with a chewy bite, closer to freshly made noodles.
At Moon Moon Food, we believe this process not only enhances the taste but also represents our philosophy — using time, patience, and care to create food that feels like a home-cooked meal.
TRR> You’ve received a Michelin award – can you talk about that please?
MOON MOON FOOD> Yes! Moon Moon Food Society has been consecutively awarded the Michelin Bib Gourmand in Taipei for eight years, from 2018 to 2025. This recognition is very meaningful to us because it highlights restaurants that offer excellent food at reasonable prices. For us, it’s not about luxury, but about consistency, quality, and heart — the way we would cook for our own families.
TRR> What does the name Moon Moon Food mean to you and why did you choose it?
MOON MOON FOOD> The origin of the name “Moon Moon Food” comes from the saying:
“When the moon is full, families are united; pairs and couples, togetherness and completeness.”
With our commitment to high-quality ingredients and the same care as cooking for our own families, we hope to bring everyone the taste of home.
TRR> A lot of people are concerned with their sodium intake. How would you recommend people enjoy your product as part of a healthy meal?
MOON MOON FOOD> We understand that many people are mindful of their sodium intake. Our Spicy Sesame Dry Noodles are entirely plant-based, using natural sesame and spices to bring out the flavor. We recommend enjoying them in the following ways:
Pair with plenty of fresh vegetables to boost fiber and vitamins.
Adjust the amount of sauce to suit your preference — this helps manage sodium intake while tailoring flavor.
Add a protein source such as tofu, edamame, or eggs to increase satiety and nutritional balance.
This way, you can savor bold, delicious flavors while still maintaining a wholesome and balanced meal.
TRR> Are there any new products coming soon?
MOON MOON FOOD> Yes! We are always working on new product development, but everything is still in progress.
TRR> In what countries are your products popular? Do people enjoy them differently in different places?
MOON MOON FOOD> Our noodles are popular in Taiwan, Japan, and South Korea. People in each country enjoy them differently, but in general, everyone loves this kind of dry noodle.
TRR> When you make noodles for yourself, what do you like to add to them to make them extra special?
MOON MOON FOOD> Two of our signature dry noodles:
Sesame and Spicy Noodles : Best enjoyed with a soft-boiled egg and chopped scallions
Black Truffle Dry Noodles: We recommend pairing with a sunny-side-up egg
TRR> Thank you very much for this opportunity to learn about Moon Moon Food and your products!
MOON MOON FOOD> Thank you, Hans! We are truly honored to be part of Meet the Manufacturer. We appreciate the opportunity to share the story of Moon Moon Food with your readers, and we hope they can feel the same warmth and care that we put into every bowl of noodles.
