
Well, today is National Noodle Day and so I figured I ought to do something, so here I am, doing something for a day with no origin story other than it started showing up in calendars at the turn of the 21st century.
As far as for me, my origins figure into this one. I got it at Uwajimaya recently; the place where I initially saw my first ramen aisle many, many years ago as a child. Times have changed; import rules have pushed varieties we might have seen in the 80s disappear. It’s sad. This one won’t have pork in it, but looks to be the same as the spicy tonkotsu on my top ten list which is exciting – I really didn’t think I’d see it in stores, so I’m hoping it’s a nice interpretation. Well, let’s begin.
Ippudo Spicy Hakata Ramen – Japan

Detail of the packaging (click to enlarge). Looks to be meat free but check for yourself. To prepare, boil noodle in 450ml water for 1 minute, 10 seconds. Add in sachet contents. Finally, stir and enjoy!

Finished (click to enlarge). Added chashu, scallion, pepper thread, Kari Kai chili crisp, sesame seed, narutomaki, and egg. Noodle comes out with a nice little crumbly hit that Hakata style usually does – floury and thin. The broth is a savory pork bone approximation with a very good oiliness. The heat level isn’t overbearing, but complimentary. An excellent bowl of ramen – textbook as to how tonkotsu should be – minus the pork. 5.0 out of 5.0 stars. EAN bar code 4979385067815.
