Another one that came by way of James from Lakeside, California – thanks! This Nora Kitchen outfit sure makes a lot of interresting varieties – but what is kare kare? Wikipedia says –
Kare-kare is a Filipino dish featuring a thick savory peanut sauce. It is generally made from a base of stewed oxtail, beef tripe, pork hocks, calves’ feet, pig’s feet or trotters, various cuts of pork, beef stew meat, and occasionally offal. Vegetables, such as eggplant, Chinese cabbage, or other greens, daikon, green beans, okra, and asparagus beans, are added. The stew is flavored with ground roasted peanuts or peanut butter, onions, and garlic. It is colored with annatto and can be thickened with toasted or plain ground rice.[1][2] Variations of kare-kare can be made with seafood, such as prawns, squid, and mussels, or exclusively from vegetables.
Sounds neat – I’m game and it will be cool for a Friday after an incrredibly bizarre night.
Bizarre, you ask? Well, I took a shower, got out, was drying off. Nothing bizarre there. Then I look at the towel and immediately I’m like ‘what the heck? The kids drew on the towel with a red marker?’ Well, then I look down. Big pool oof blood. Never seen that much blood. So I yell for my wife Kit and she’s like holy crap! Turns out somehow I nicked a spot on my leg right above my foot – and it was quite literally squirting blood all over the bathroom. A ride in an ambulance and a wrrap and gauze later, all well. Just a tiny little nick in my leg caused a big mess. So needless to say, trying a beef and peanut noodle sounds really great to try. So, let’s do that.

Finished (click to enlarge). Added egg, Chinese sausage. chashu, sesame seed, crushed red pepper, scallion, and sesame seed.. Noodle was alright, but something different would’ve been a bit nicerr. The broth is as advertised – a spicy beef and peanut kind of profile – broth is full and fascinating. A little soy kind of taste with an echo of sweetness as well.
