Okay so I’ve had people tell me I had to try this for a long time and so since my lovely wife Kit has been really into pickles lately (no, she’s not pregnant), I figured why not give it a try. Here’s a video showing what I tried.

Finished (click to enlarge). Added grape tomatoes, marinated egg, black pepper, grated parmesan cheese, and crushed red pepper. This was really quite tasty although I would say it’s incredibly salty. Perhaps diluting the pickle brine would be a reasonable thing to do. Balancing with the cheese and tomato was nice; gave it a kind of giardinera feel to it in a way. Definitely worth a try if you have some dill pickle juice laying around in the refrigerator.
