Here’s what they had to say about this particular variety – “Okinawa prefecture is a group of islands in the south of Japan. Well known for its tropical weather and beautiful beaches. However, equally well known is the  unique Okinawa Soba produced on these islands.

Okinawa Soba is a noodle soup with thick wheat noodles reminiscent of udon noodles and are slightly flat. Definitely a deviation from typical thin ramen noodles but just as delicious.

The soup is a pork based broth flavored with kombu (seaweed) and bonito (fish flakes) adding to a lighter and more delicate taste.'”
