I got an email a few weeks ago from Pinky Tham, Digital and Social Media Manager at Mamee Double-Decker, a Malaysian maker of instant noodles amongst other things. She was very interested in taking part in the Meet The Manufacturer spotlights, and it sounded good to me! This interview was conducted with Pierre Pang, Mamee Double-Decker General Group Manager and grandson of the founder.

THERAMENRATER> Thank you very much for agreeing to do this interview! Could we start off with some information about Mamee Double-Decker; when was Mamee Double Decker founded, where and by who?

MAMEE DOUBLE-DECKER> MAMEE Double-Decker is a Malaysia based manufacturing company that was founded in 1971 by Datuk Pang Chin Hin. It all started in a small historical state in Malaysia called Melaka and Datuk Pang Chin Hin started his interests in manufacturing his first product called MAMEE Monster noodles snacks and expanded it beyond to instant noodles, snacks and beverages.

TRR> For those of my readers who are not familiar with your line of products, could you tell us a little about them?

MDD> Our products from MAMEE Double-Decker are divided into 3 main categories that are instant noodles, snacks and beverages. For Instant Noodles, we have
Mamee Instant Noodles, Mamee Slrrrp and Mamee Chef. As for snacks, we have Mamee Monster (noodles snack), Corntoz (corn snacks) and Mister Potato. For beverages, we currently have Cheers (carbonated drinks), LiteYo (yogurt drink) and Nutrigen (cultured milk).

TRR> Can you tell us about the differences and new features of your MAMEE Chef line?

MDD> MAMEE Chef’s noodles are made using a special technique known as La Mian (Mi Tarik) or ‘pulled noodles’ technique that originated in China during the 15th century to give the noodles a springier texture. In its quest to create the perfect flavor, MAMEE teamed up with Dato’ Chef Ismail, a renowned celebrity chef locally and internationally. Together, MAMEE and Chef Ismail have created an original Thai Tom Yam recipe made with fresh ingredients, herbs and spices as MAMEE Chef’s debut flavor. The MAMEE Chef range also features other unique local flavors like Curry Laksa and Spicy Chicken Shiitake.

TRR> You not only make regular instant noodles that are cooked, but a line of snack noodles called Mamee Monster – can you tell us about them and about who this monster guy is – does he have a name?

MDD> MAMEE Monster snack is a fried noodles snack that is already cooked and you can eat it straight out of the packet. The blue monster is known as MAMEE Monster and he symbolizes having fun and represents how enjoyable the snack is. He has become quite an icon in the local market.

TRR> Is Mamee Doubledecker involved in the local community around you?

MDD> We are actively involved in local charity drives, orphanages and old folk’s homes with our Mamee Care Program.

TRR> Why do you think noodles are such a popular food?

MDD> Noodles have become popular due to a few factors like the convenience of cooking and the variety of textures and flavors that they come in. It is a good alternative to rice, especially for the Asian market. Also, we had some understanding from research that the variety of flavors for instant noodles and the tastiness of it become everybody’s quick fix choice.

TRR> You are located in Malaysia. Can you tell us a little about where you factory is and life there?

MDD> Our factory is located in one of the most historical states in Malaysia known as Melaka. Melaka used to be a port in the 15th century and this historical city centre has been listed as a UNESCO World Heritage Site since 2008. Melaka is a city well visited by tourists locally and internationally. We also have a museum and restaurant known as MAMEE Jonker House on the popular Jonker street in Melaka to share our history.

TRR> Are there any new products that will be coming out soon that you could tell us about?

MDD> We have a few new flavors in our production pipeline now, catered for the local market with a tinge of surprise elements compared to our usual instant noodles.

TRR> You make an ‘Xtra’ and a ‘Berapi’ spicy curry noodle – which is hotter?

MDD> ‘Xtra Pedas” is the spiciest among both of the choices above

TRR> A lot of people wonder about the health factors (sodium, etc) when it comes to instant noodles. How do you recommend people made instant noodles a healthy part of their diet?

MDD> For our MAMEE Chef range, we make the soup based on paste form with real ingredients, which contain less MSG.

TRR> What was your first product?

MDD> MAMEE Monster Snack was our first product that we produced.

TRR> Where are your products available?

MDD> Our MAMEE Chef product is only currently available in Malaysia but it is in all the hypermarkets, supermarkets and general trade.

TRR> When you make noodles for yourself, do you add anything or have any recommendations?

MDD> I usually like to add an egg and some vegetables to make it a wholesome meal for a quick fix.

TRR> Are there popular recipes locals have come up with for your noodles?

MDD> In Melaka, there are stores that sell MAMEE Goreng (Fried MAMEE Noodles); they will stir fry the noodles with egg, vegetables and put the paste as seasoning.

TRR> Are certain products enjoyed on particular holidays?

MDD> We noticed that during school holidays, our noodles are particularly more popular. It could due to the kids going around and travelling with their families.

TRR> Have there been any flavors you’ve thought of producing that never made it to market?

MDD> Our R&D always proposes a list of new flavors for us to try and evaluate on what would be the best flavor for local and international markets. At times depending on likeability, we will launch the flavor or keep improving the recipe.

TRR> Is Mamee Doubledecker tech savvy? Are there any apps for mobile phones we should know about?

MDD> At MAMEE Double-Decker, we are just starting to explore technology more. We currently have our Facebook page for MAMEE Chef here: https://www.facebook.com/mymameechef
